Frappe coffee recipes

Peculiarities

It is prepared on the basis of espresso with the addition of ice. In the process of whipping such a cocktail, a lot of foam is formed, making the taste softer. If you prepare it with instant coffee, the taste may have a slight sourness. Water takes away the bitterness, so iced coffee is much more pleasant to drink without added sugar.

Frappe coffee drink is usually served in glasses and drunk through a straw. The French recipe includes ice cream, which gives the cocktail an especially creamy taste. If alcohol or syrups are added to a cold drink, then it is no longer a frappe.

Despite its light taste and cooling effect, it can be consumed not only in summer, but also in the cold season. There are “winter” recipes in which milk, chocolate, honey and even nuts are added to the drink.

Frappe Variations

With the rise of coffee culture, coffee shops are often bending over backwards to attract new customers and differentiate their drinks from competitors. It's just more good news for customers. This means you'll never run out of frappe versions.

While the Greeks stick to tradition and use instant coffee granules, the rest of the world prefers to use the ever-popular espresso. You simply shake a double espresso with a little sugar and ice and serve! Some coffee shops may add liqueurs such as Kahlúa to the mix. Some others may top your drink with a scoop of ice cream.

There are other interesting options. Bulgarians whip up their frappe using Coca-Cola instead of water. In Denmark you will find frappe made with cold milk instead of water. Serbs make their frappe with milk or ice cream and top it with whipped cream.

Origin

Although the word “frappe” is of French origin, the roots of the drink are Greek. The frappe coffee recipe was accidentally invented by Nestle representative Dimitrios Vakondios at the international fair in Thessaloniki in 1957. Being a lover of instant coffee, he could not find boiling water to make his favorite drink, and simply filled it with cold water. To break up any undissolved lumps, he decided to mix the ingredients in a shaker. This is how the recipe for Greek coffee frappe came about - a cold cocktail with a high head of foam.

This recipe has taken root well in hot Greece and Cyprus. In Europe, it has also become popular and widespread, with each country having its own local combination of ingredients.

Chemical composition

The chemical composition of frappe depends on the recipe used to prepare the drink. The required ingredients include instant freeze-dried coffee, sugar and water.

Real instant coffee is made from natural coffee. The process of its manufacture is quite complex and consists of several stages:

  1. Roasting natural coffee beans (Robusta, Arabica, Excelsia, Liberica or blend).
  2. Grinding (roasted coffee beans are ground to a powder).
  3. Steam extraction (coffee powder is impregnated with high pressure steam, after which the coffee extract is condensed).
  4. Vacuum drying (the resulting coffee condensate is dried to powder).
  5. Granulation (coffee powder is pressed into granules).

The composition of instant coffee includes alkaloids caffeine and trigonelline, chlorogenic acid, proteins, fats, carbohydrates, tannins, vitamins, the amount of which depends on the type of coffee:

  • caffeine – 0.6-1.9%;
  • trigonelline - 0.2-1.3%;
  • chlorogenic acid - 4-10%;
  • other organic acids (more than thirty pieces);
  • proteins - 9.0-15.2%;
  • lipids - 2.8-3.6%;
  • carbohydrates - up to 7%;
  • tannins - 3.6-7.7%;
  • vitamin B2 (riboflavin) - 1 mg per 100 g;
  • vitamin PP (nicotinic acid) - 20 mg per 100 g.

Instant coffee also contains minerals:

  • phosphorus - 250 mg per 100 g;
  • calcium - 100 mg per 100 g;
  • iron - 6.0-6.5 mg per 100 g;
  • sodium - 3.0-3.3 mg per 100 g.

The calorie content of this drink depends on the ingredients. If it is prepared according to the classic recipe, its calorie content is about 80-100 kcal per serving. When adding additional components, the calorie content will increase.

How to cook a classic version

This variation of the drink is most often found in southern Europe, although there it is simply called “iced coffee.” In the rest of the mainland, the recipe has undergone many changes and has rather become a cocktail with different flavors.

Greek recipe

The basis for making frappe coffee according to the Greek recipe is instant powder, as was done for the first time. It can be upgraded in your own way by adding sugar, milk or honey. There are various step-by-step recipes with photographs on the Internet, but you need to take the following ingredients as a basis:

  • 1-2 tsp. instant coffee.
  • 150 ml cold water.
  • Crushed ice.
  • Sugar to taste.

How to make frappe coffee using instant powder? There are two ways to do this:

  1. In a shaker, combine coffee, sugar and crushed ice. Shake the closed container thoroughly until the drink has a homogeneous consistency.
  2. Prepare the espresso and cool it to room temperature. Add crushed ice, half a teaspoon of coffee powder and 100 ml of cold water. Shake the resulting cocktail thoroughly until a stable foam appears.

Unusual frappe recipes

In Greece, frappe is made from instant coffee mixed with cold water, sometimes milk. The drink is poured into a glass and ice cubes are immediately added. In our cafes you can often encounter it being prepared from espresso (this coffee is sometimes called caffé freddo or frappé freddo).

To make iced coffee from espresso (either chilled or fresh), you will need a shaker or mixer. The advantage of a mixer is that it crushes ice.

Preparation:

  1. Prepare espresso (Brazilian beans are the leading choice of raw materials).
  2. Add sugar.
  3. It is recommended to chill the espresso. It will keep for several hours in the refrigerator, so you can enjoy your morning coffee after lunch.
  4. Whisk the espresso until foamy (but don't expect to get foamy like you would with instant coffee).
  5. Add ice, ice water or cold milk.
  6. Serve in a tall glass with a straw.

Some additional tips for interesting recipes:

  1. Women who are breastfeeding can also drink frappe. Instant and natural coffee are now available in decaffeinated versions, and the resulting taste is as good as the original.
  2. Do you love fragrances? Try adding a drop of your favorite syrup to the frothed foam. For example, a coconut will take you to warmer climes, to palm trees and beaches.
  3. Classic milk can be replaced with vegetable milk - soy milk will provide a pleasant taste.
  4. Want more freshness and coldness? Put 1-2 tbsp. ice cream (any kind) to the bottom of the glass; before serving, decorate the glass with whipped cream.
