9 tips on how to properly brew delicious coffee in a Turk on the stove

The ceramic pot can safely be considered the heir to the very first utensils in which people made coffee. Time and technology have made their own adjustments, but a cezve made of fired and glazed clay is still in demand in modern kitchens. How to brew coffee in a ceramic cezve correctly, are there any special subtleties for preparing a decent drink in a ceramic cezve?

The history of the emergence of ceramic Turks

The history of the appearance of utensils for brewing coffee is several hundred years old. It is believed that coffee was originally prepared by African nomadic tribes. The drink was brewed in copper pots over a fire. Gradually, the containers were modified for ease of use: the neck of the vessel became narrower, the handle was longer. This made it possible not to spill the drink on the coals and to hold the cezve more securely in your hands.

Such a vessel was brought to the Russian Empire from Turkey and called Turka

To this day, Turks are used not only from copper, but also from clay and ceramics. Since ancient times, humanity has created ceramic products: jugs, dishes, tiles. Ceramic Turks are made from fired clay and covered with a matte or glossy glaze.

Advantages and disadvantages of ceramic Turks

The drink cools slowly in the Turk.
Ceramic cookware guarantees high quality brewed coffee. Unlike copper, it has a number of advantages:

  • Allows you to enjoy the true taste without unnecessary impurities, as it does not retain traces of the aroma of previous brewings of the drink. For lovers of flavored, blended coffee varieties, this is the best option.
  • The thickened walls of the Turk and the wide bottom allow you to gradually reveal the taste and aroma of the drink due to the uniform distribution of heat.
  • Easy to care for, easy to clean.
  • Eco-friendly and safe for human health.

When choosing a cezve, you should pay attention to some disadvantages of ceramics:

  • Unlike copper, it is more fragile and breaks easily.
  • With a sharp temperature change, it breaks its integrity.

The burner or surface of the stove should allow the Turk to stand level and provide uniform heating of the vessel.
Preparing coffee in a ceramic Turk has a number of features that are important to consider.

  1. Before brewing coffee, you need to boil water in a kettle.
  2. Pour into a small saucepan as much water as you need to make coffee. Place on low heat.
  3. Pour boiling water from a kettle into a ceramic pot and let it heat up. Pour out the water and heat the Turk evenly over the fire, carefully turning it sides. This results in drying and additional heating of the turk.
  4. After this, you need to quickly pour ground coffee into the coffee pot, add sugar to taste and mix with a dry spoon. Pour the water that has just boiled at this point from a small saucepan into the Turk and put it on low heat.
  5. When foam appears on the surface and the coffee begins to rise, remove from heat and pour into cups.

Natural brewed coffee, prepared in a Turk, increases activity, invigorates, and improves digestion. Biological substances contained in grains improve metabolism and increase the body's antioxidant defense.

Caring for a ceramic pot

In order for the utensils for brewing coffee to serve well and for a long time, it is necessary to take into account the type of stove on which the utensils will be used and the rules for caring for the ceramics.

  1. For an induction cooker, a special adapter in the form of a metal disk is useful. The diameter of the gas stove burner should be larger than the diameter of the bottom of the Turk. For an electric stove with a spiral, you will need a divider for uniform heating.
  2. A ceramic cezve is placed on a glass-ceramic and electric stove before turning on the burner. This is done to prevent the dishes from cracking.
  3. Do not expose the Turk to temperature changes when washing. After removing the ceramic dish from the heat, place it on a dried stand.
  4. When washing, it is prohibited to use abrasives, oxalic acid and harsh cleaning utensils.

After use, the Turk is washed in warm water with a gentle detergent.
To clean the Turk from coffee burnt in it, you need to fill it with water at room temperature. Thoroughly mix the grated piece of laundry soap and soda ash in water until completely dissolved. Boil the solution in a Turk over low heat until the surface is cleaned of burnt residues. Then drain the water and rinse the dishes in hot water, cleaning with a soft sponge. Finally, dry with a towel.

There are many devices for brewing coffee at home. One of the most popular is the ceramic Turk. Some beginners have difficulty preparing an invigorating drink in this container. To prevent their occurrence, you need to know about the nuances of brewing coffee in a ceramic pot on various stoves.

Which stove does it work better – gas or electric?

In modern apartment conditions, there are a couple of main options with which you can brew coffee: gas or electric stove. There is no fundamental difference in the process and result of cooking, however, those who are interested in how to brew coffee in a Turk on an electric stove correctly should know some features.

You can learn how to properly brew an invigorating drink at home on an electric stove if you take into account the following nuances:

  1. Modern models of electric stoves create higher temperatures than gas stoves. In this regard, there is a need for correct power adjustment.
  2. If you turn off the electric stove under the coffee pot, the drink will continue to boil, which is unacceptable. This is due to the increased inertia of cooling, and therefore it is recommended, shortly before the end of cooking, to turn off the stove and simply leave the Turk to “reach” on its own to the required temperature on the already cooling stove.

Advantages and disadvantages of ceramic Turks

There are a number of advantages due to which a ceramic coffee pot has gained popularity among lovers of this drink. Thanks to the application of a glassy coating - glaze, the dishes do not undergo oxidation like metal ones, do not absorb the aroma of coffee beans, and do not enter into chemical reactions. These qualities allow you to prepare a drink with a pure taste and aroma. At the same time, you can capture the individual characteristics of each type of coffee.

  • How to choose the right coffee pot? Criteria for choosing a coffee turk!

Also, the advantages of such cookware lie in its shape and design. The wide bottom allows the heat to be evenly distributed throughout the vessel, and the thick walls carefully maintain the accumulated temperature. The narrow neck is designed to preserve the aroma of the drink as much as possible.

Ceramic Turk also has its disadvantages. Among them, ceramics have reduced thermal conductivity. Because of this, the cezve heats up slowly, but maintains its temperature. This property makes it difficult to turn off the fire in a timely manner, which is why the coffee often runs away. To prevent this from happening, remove the vessel from the stove at the moment when the foam begins to rise.

How to use

You can use a ceramic cezve not only on a gas stove, but also on other surfaces. But before that, you need to familiarize yourself with the rules for brewing coffee.

To ensure the safety of the Turk on any stove, you should first place it on the burner, and only then turn on the heat.

On a gas stove

You can use a Turk made of ceramics on a gas stove. In this case, you can place the vessel directly on the fire. There is no need to be afraid that it will burst or deteriorate, because such dishes undergo special heat treatment that increases strength.

Several nuances need to be taken into account:

  • the Turk must stand steadily on the surface;
  • the diameter of the burner should be smaller than the size of the bottom of the vessel;
  • if there is no small burner, you must use a metal divider that will distribute the level of heating of the bottom;
  • The drink needs to be brewed over low heat.

If handmade utensils are used to brew coffee, a metal divider must be used to preserve its appearance. It will protect the ceramics from flames and prevent its edges and convex elements from scorching.

On electric

Using ceramic Turks on an electric stove is very simple. To brew delicious coffee, all you need to do is place the cookware on the burner and turn it on. This cooking method should be used if the heating element of the stove is in the form of a disk.

If heating is provided by a spiral, the Turk should be placed on a divider. This is due to the fact that this shape of the heating element does not allow even distribution of heat.

On induction

This cookware can also be used on an induction hob. However, there is a rule without which nothing can be cooked.

  • Which Turk should you choose? Signs and size of the correct Turks

To brew coffee on an induction hob, you need to use a thick steel disc.

The device is placed on the burner, and a Turk is placed on top of it. Such an adapter is necessary to transmit a temperature pulse to ceramics.

On glass-ceramic

To prepare an invigorating drink on a glass-ceramic stove, you do not need any additional equipment. For cooking, you should use a good cezve, placing it on the burner and turning on the heating element.

Recipes for how to cook deliciously from ground grains

Those who are interested in details about how to brew coffee in a Turk on the stove can find the recipe for a tasty and fragrant drink below.

Classic version with foam

We have already discussed above the general procedure for brewing coffee in a Turk on a gas, induction, glass-ceramic or electric stove. Let's look at how to make classic coffee with thick foam at home.

It is recommended to use finely ground coffee, which will make it possible to get a really thick and very dense foam. Next you will need to take one hundred milliliters of filtered water, two teaspoons of coffee and one spoon of sugar if desired.

The first step is to pour the ground coffee into the coffee pot, then add sugar and add water. It is advisable to use a Turk so that it is not completely filled. Then it is placed on the stove and you just need to prevent the liquid from boiling and “running away”, and also control the foam, which will tend to rise to the edges.

Sometimes it is advised to lift the Turk from the burner for 2-3 seconds during the cooking process so that the foam settles a little. There is not much point in such manipulation. It is advisable to initially pour less water so that the coffee does not “run away”.

Cinnamon

The ingredients in this recipe are the same as the previous version, except that it becomes necessary to add one third of a teaspoon of cinnamon. Next, all the components, in addition to water, are mixed and heated on a small flame at the bottom of the vessel for a couple of minutes. After this, water is added to the Turk, and after 5 minutes the aromatic, rich drink will be ready.

With salt

Sometimes coffee is even prepared with salt: this allows you to reduce the traditional bitterness and get an unusual taste, which, however, can hardly be called true. Don't forget about the dangers of salt. Nevertheless, you can try this option as an experiment. The cooking principle is no different from that described above. Just at the initial stage, after pouring water into the Turk, add a small pinch of salt.

Another unusual addition to coffee is garlic.

With milk

Coffee can be prepared at home not only with water, but also with milk. To do this, take two teaspoons of coffee and about 50-75 milliliters of milk. To begin with, milk is poured into the Turk, heated to 40°, and then coffee powder is added and the whole mixture continues to heat. After which it is necessary to repeat the boiling process twice, and the consistency of the drink should ultimately be quite thick.

  • 8-10 grams of freshly ground coffee beans;
  • 100 milliliters of water;

  3. Then cold water is poured into the container.
  4. The dishes are returned to low heat.
  5. When the liquid warms up, it should be stirred. It is recommended to do this procedure once. After this, foam will appear on the surface. Gradually it will begin to darken.
  6. At the moment when the foam begins to form large bubbles and rise, the Turk should be removed from the heat.
  7. After 2 minutes, the drink can be poured into a cup. This should be done carefully so as not to destroy the foam bubbles.

There are several ways to make coffee in a ceramic pot:

  1. If you want to make Turkish coffee , you need to bring the drink on the stove several times until the foam grows. The best option is 2-3 repetitions of this procedure.
  2. If you want to enjoy a Brazilian drink , first of all you need to heat the water in the Turk, and only then pour the ground grains into it.
  3. Arabic coffee involves the use of sugar during the preparation process. In this case, sugar crystals are poured onto the Turkish bottom and fried a little until dark. After this, water is poured into the container and the liquid is heated. Lastly, add the crushed coffee beans. During preparation, the drink must be constantly stirred. Finish cooking by adding a pinch of cinnamon.
  4. If you follow the Italian cooking method , water can be replaced with milk. In this case, the process of brewing coffee is standard.

It is very important not to let the coffee boil

When did the first ceramic Turk appear?

The choice of a Turk is determined by one’s own preferences and capabilities. However, it is the ceramic Turk that is attracting more and more interest. Interest has increased due to the many advantages of such a material as ceramics.

The first use of a ceramic cezve can be dated back to the time when coffee beans first became known to mankind, because people began to make dishes from clay, having acquired a sedentary lifestyle that replaced the wandering one.

It was this time that is considered the birth of agriculture, as well as most of the first crafts for the manufacture of primitive household utensils. The very first ones began to be made from ceramics, which from ancient Greek means clay.

Before this type of utensil was invented, people used wicker baskets. It was in them that they stored water, food and other necessary items. But these baskets had one drawback - tightness. Therefore, over time, humanity began to spread layers of clay on their surface, which hardened and gave them a hard and waterproof shape.

The first use of a ceramic cezve can be dated back to the time when coffee beans first became known to mankind.

After humanity understood the positive properties of clay, people began to invent the first ceramic dishes, the creation procedure of which was very similar to modeling from ordinary plasticine. When it was molded, it was brought to the fire, where the dishes underwent a firing procedure. After this, the clay quickly became strong and did not allow moisture or liquid to pass through.

Advantages and disadvantages

Like any material, ceramics has its pros and cons. Speaking about such characteristics, first it should be said that ceramics are divided into several types:

  1. Porcelain is hard;
  2. Soft;
  3. Pariyan (a type of soft material without glaze);
  4. Biscuit (hard material without glaze).

Additionally, there are porous types of ceramics:

  1. Faience with glaze (delicate);
  2. Plain earthenware with glaze;
  3. Terracotta (unglazed ceramics).

Despite the variety of types, ceramic Turk is divided into glazed and unglazed.

Advantages of unglazed cezve:

  1. The ground coffee in such a product is saturated with oxygen, acquiring aroma and taste.
  2. Large selection of models.

The ground coffee in such a product is saturated with oxygen, acquiring aroma and taste.
Flaws:

  1. Thick walls allow the entire container to be heated evenly, but the accumulated temperature does not immediately drop even after removing the Turk from the heat, which leads to further boiling.
  2. The porous structure of the material absorbs all the aromas of the coffee drink. In this model you can prepare only one type of coffee.

The advantage of glazed products is the presence of additional coating. The glaze completely fills all the cavities of the material and does not allow aromas to be absorbed. In both cases, the products will not cause harm to the body, as they are made of environmentally friendly material.

The glaze completely fills all the cavities of the material and does not allow aromas to be absorbed.

Ceramics is a fragile material, so you should not drop it or even allow it to be knocked against other objects.

Many coffee lovers are looking at products made of porcelain or glazed ceramics. However, the ratio of thermal performance and excellent design is incompatible with the lightness of the material. If you plan to use small stones or sand to make coffee, then this option is excluded, since small particles can render the product unusable. Unlike metal or copper Turks, ceramic models cannot be restored.

The taste of coffee depends not only on the material, but also on the shape of the product. History has shown, despite the numerous forms, that they are all divided into two types: Turkish and Armenian.

  1. The Turkish form is characterized by a sharp transition from a wide bottom to a narrow neck. The “Turkish” shape is characterized by a sharp transition from a wide bottom to a narrow neck.
  2. The Armenian shape resembles a cone. Additionally, this type is divided into Old Armenian and Modern Armenian forms. The “Armenian” shape resembles a cone.

This point may affect the taste differences of the finished drink, but this is for true connoisseurs. For ordinary coffee lovers, this fact is not significant.

How to cook properly

Which of us has not had cases when undercooked food turned out to be coarse and tough, and overcooked food, on the contrary, became tasteless and shapeless mess? Many people believe that proper nutrition lies solely in the right choice of foods. But that's not all. It is equally important to prepare these products correctly. After all, our body receives all the nutrients and vitamins necessary for life with food. And the greatest content of all useful substances necessary for the normal functioning of the body is found in boiled foods. That is why it is very important to know how to cook food correctly in order to preserve your health and the health of your entire family for many years.

Food needs to be cooked correctly

To be able to cook food correctly means to master the basic, most common and extensive method of preparing dishes. Everything that has served humans as food for many millennia can be boiled. This means that dishes made from boiled products make up the majority in any national cuisine.

There is more than one cooking method. And all of them are capable of giving the same product a different taste and consistency. In order to cook food, you can use completely different liquids. They can be water, milk, brine, various juices or decoctions of other products. You can cook it by steaming or over steam, in a water bath or a steam bath. It becomes obvious that all these cooking methods allow you to achieve a great variety in the tastes of the same product.

The inability to cook correctly, without using all available methods, impoverishes our menu, makes our daily diet monotonous and “boring”. After all, to be honest, most of us by cooking only mean boiling food in water. But this only method is often used incorrectly. More water is poured into the pan than required, and many people prefer to cook food with the lid open. As a result, a lot of time is wasted, most of the nutrients simply disappear, and the food loses its aroma and becomes tasteless.

A conversation about how to properly cook porridge requires special attention. After all, cooking porridge comes down mainly to cooking cereals. And each cereal requires an individual approach. This is why it is so important to know and be able to properly cook everything that we eat so that it is always tasty and healthy.

Features of use

The thermal conductivity of ceramic coffee pots is lower than, for example, that of copper. Therefore, it is important to prevent the foam from rising while the Turk is on the fryer.

  1. Such cezves can be made either manually or in a handicraft way in production. In the first option, the uniqueness of the product becomes an advantage. In the second, there is a lack of individuality, but at the same time the product does not lose its charm. Significant differences in price. Ceramic cezves, made by hand, are much higher than their industrial counterparts.
  2. The debate continues about whether it is possible to brew coffee in such containers using gas. It is possible, since the heating temperature when hardening ceramics during production is much higher than on a gas stove.

The size of the burner should be smaller than the diameter of the bottom of the Turk. The dishes must stand on it steadily. To comply with this recommendation, use a divider for larger burner diameters.

The cookware must be stable on the burner.

Some coffee lovers even put a small metal sheet on the gas and place a Turk on it. In this way you can make oriental coffee on sand. Instead of a metal sheet, take a frying pan and pour sand into it, after which the cezve is installed. Coffee is not brewed this way, but simmers, slowly releasing its taste and aroma. These methods are also good because they protect the ceramics from direct exposure to fire.

A low heat ensures uniform heating of the cookware.

Coffee can be prepared on an induction hob using the metal disc adapter that comes with it. It helps to cook dishes in cookware not intended for induction cookers.

A divider is necessary for electric stoves, but with glass-ceramic appliances everything is much simpler. You just need to install the Turk without using additional devices.

First, place the Turk on the stove and only then turn on the heating.

Coffee can be prepared on an induction hob using the metal disc adapter that comes with it.

Caring for a ceramic pot is as easy as cooking in it:

  1. First, the dishes are allowed to cool and only then washed using gentle detergents;
  2. For cleaning, do not use hard sponges or products with abrasive particles;
  3. Most ceramic products are not dishwasher safe. However, there are exceptions that are outlined in the manufacturer's instructions.

Do not rinse hot ceramic dishes with cold water. The material is afraid of sudden temperature changes.

This Turk, like any utensil, is stored in a place where it will not fall.

Do not rinse hot ceramic dishes with cold water.

The peculiarity of caring for ceramic Turks is due to its shape, which was briefly discussed above. Turkish-shaped cezves usually consist of two parts. The joint is connected by soldering. Unscrupulous manufacturers sometimes do not attach importance to this point. With strong constant heating, the seam may simply come apart. Additionally, this type is difficult to clean due to its narrow neck.

The method of preparing a tonic drink in a ceramic vessel is similar to the method of preparing coffee in a copper or iron cturk.

Traditional oriental coffee recipe (also known as the classic method): for one cup of coffee you need two small spoons of the finest ground beans. The ground coffee is poured into a container and water is added to the narrowest point (the shoulders). The volume of water depends on the volume of the container itself. As a rule, a Turk is intended for preparing one serving of drink.

After which the cezve is placed on the stove and the fire is turned on. It is important not to let the coffee reach the boiling point. This will be indicated by the resulting foam, which, depending on the grinding, can be dense or thin.

It is important not to bring the coffee to the boiling point.

Ceramic coffee pot: features and benefits

There is a special category of coffee lovers - they prepare this drink exclusively in Turk. They do not recognize any newfangled devices, and cutting-edge recipes only make them smile condescendingly. They nod sympathetically to the adherents of coffee machines and siphons and continue to closely monitor that their coffee does not escape from the Turks.

Indeed, you can fully reveal the taste and aroma of coffee, and extract its most hidden notes, only by preparing coffee by hand. Therefore, if you are tired of being content with a pale copy of real coffee, which should be “black as the devil and hot as fire,” be sure to buy a Turk.

Traditionally, the Turku is made of copper. The ceramic pot is a new product that has already become popular among professionals and ordinary lovers of good coffee. Let us also get to know this skillful beauty better.

Ceramic coffee pot: features and benefits

First, it’s worth understanding the terms. Ceramic Turks should not be confused with clay ones, although it would seem - what is ceramics made of if not clay? Why are products made from the same materials called differently?

Clay Turk

  1. The clay Turk is fired, but not glazed.
  2. Clay Turk is porous, so it perfectly absorbs odors and coffee oils. This feature is highly valued by some experts. With each use, the container is saturated with the aromas of previous drinks, which mix with the fresh one, enriching it. It is believed that the value of such a Turka increases with each subsequent use.
  3. But for these reasons, it is recommended to cook only one type of coffee in a clay pot.

Ceramic Turk

  1. The ceramic Turk is not only fired in a kiln at high temperature, but also undergoes final processing - a glassy coating is applied to it - glaze.
  2. This coating is what makes the ceramic Turk so convenient and practical to use. Ceramics does not oxidize, does not absorb odors, tastes, and does not enter into chemical reactions.

Therefore, if your goal is to enjoy the pure taste of a particular type of coffee, without any impurities, then a ceramic coffee pot will be your best assistant. With its help, you can experiment with different types of coffee, find interesting combinations, creating your own signature blends.

A ceramic pot will invariably provide high taste characteristics of the finished drink. A wide bottom will evenly distribute heat throughout the entire volume of the vessel, thick walls will maintain temperature, and the difference between a wide bottom and a narrow neck will preserve all the aromatic substances in the future drink.

Features of ceramic Turks

When preparing coffee in a ceramic pot, do not forget that ceramics have low thermal conductivity. This means that the vessel will heat up slowly, but it will also cool down just as slowly. You may need to practice to get the hang of removing the Turk from the heat exactly at the moment when the head of foam is just about to begin to rise. If you remove it from the heat in the middle of the process, the coffee will continue to rise and may run off onto the stove.

The ceramic Turk must be removed from the heat before the foam rises to the edge of the Turk. Ceramics retains temperature for a long time and heats the liquid for some time after the contact with the heat source ceases.

Ceramic Turks can be made industrially or manually. The factory Turk will have a guarantee, so you can be confident in the quality of the product. Well, a handmade item is unique in its kind and will have an elusive charm and positive energy, for which such products are valued.

Which Turk is better, copper or ceramic?

Traditionally, the cezve was made of copper, so all its successors – aluminum, brass, clay and ceramic – are compared with this authentic cezve. The answer will be indecently simple - it all depends on your personal preferences. Each option has its own advantages and disadvantages, which depend on the physical characteristics of the material.

Copper Turk

  • Copper has a high thermal conductivity coefficient, due to which it heats up quickly and cools down just as quickly. It was this property that was decisive initially, because it made it possible to prepare coffee directly on hot sand. Copper stops heating immediately after contact with the heat source ceases.
  • A copper Turk must have a complete internal coating, usually from food-grade tin, because copper forms soluble compounds that are dangerous to human health.
  • Copper Turks are much cheaper than ceramic ones.

Ceramic Turk

  • Ceramics have a low thermal conductivity coefficient. It cools down as slowly as it heats up. The ceramic Turk continues to heat the drink even after the vessel is removed from the heat. If you miss the right moment, the coffee may run away and instead of enjoying the noble drink, you will have to wash the stove and table from this drink.
  • Ceramic Turks do not absorb the smells and tastes of previous servings of coffee. Therefore, the taste of coffee in such a Turk will be pure, without any additional surprises.
  • Caring for ceramic cezves will not be difficult for you; they are easy to clean and do not require any special conditions.
  • Ceramics is completely inert, which means that it does not enter into any chemical reactions, which means it is completely safe for your health.
  • Despite all its advantages, ceramics have a single, but very annoying drawback - it must be handled with extreme care, it breaks easily.

The ceramic Turk is afraid of temperature changes and shocks. You need to handle it carefully and avoid letting it fall on the floor. Don't rinse it with cold water immediately after use; let it cool on the stove or on a counter.

  • Having made a choice in favor of a ceramic Turk, you should be prepared to pay on average one and a half times more for it than for a copper Turk of the same volume.

When it comes to design, it is purely a matter of your taste. Both materials, copper and ceramics, provide the opportunity for sophisticated decoration. Copper Turks are decorated with elegant chasing, and ceramic ones are covered with intricate patterns and painted in various colors.

How to use a ceramic Turk on a gas stove?

  • The ceramic pot is safe to use on a gas stove. There is no need to worry that the container will crack or burst. The firing temperature used to harden ceramics is much higher than the temperature that a gas stove can provide.
  • Make sure that the ceramic pot stands level and stable on the burner. The diameter of the burner should be less than the diameter of the bottom of the Turk.
  • If your stove does not have a burner of a suitable diameter, we advise you to use a metal divider. With its help, you will securely install the Turk and ensure even heating.
  • In addition, such a cutter will help preserve the original appearance of the Turk, because high flames can smoke the sides of the cezve.

Coffee should be prepared in a ceramic Turk over the lowest heat. This ensures even heating of the dishes.

Features of using ceramic Turks

What other subtleties should you know before buying a ceramic cezve?

Using a ceramic Turk on different slabs

  1. If you have an induction cooker, you will need a special adapter for induction cookers. It is a metal disk with an internal magnetic layer that provides uniform heating and works with any cookware that is not intended for induction cookers, including ceramic and glass.
  2. Glass-ceramic hobs do not impose any requirements. You just put the Turk on the stove and make coffee.
  3. If the burners on your electric stove have a spiral shape, use a divider that will ensure uniform heating. If the burners are made in the form of solid metal disks, you will not need any additional devices.

Remember, when using a ceramic Turk, you should first install it on the stove, and only then turn on the heat.

Caring for a ceramic pot

  • Caring for ceramics is very simple and does not require any special effort from you. After use, let the Turk cool, then wash it with warm water and a mild detergent and dry it.
  • Do not use abrasive detergents or products containing active acids.
  • Dishwasher safeness depends on manufacturer's recommendations.
  • It is strictly forbidden to rinse a hot pot with cold water. Ceramics are afraid of sudden temperature changes. After use, allow the cezve to cool on the stove or on a dry kitchen rack.

How to choose a ceramic Turk

What should you pay attention to when buying a new cezve? What nuances should be taken into account?

The range of ceramic Turks is quite wide, you can easily find one that suits your liking. They are sold in specialized tea and coffee shops, regular supermarkets and online stores.

  1. A ceramic pot should be conical in shape, with a wide bottom and a narrow neck. This shape ensures that the grounds settle quickly. A wide bottom is necessary for slow and even heating.
  2. The narrow neck ensures the formation of a kind of plug of rising foam. This stopper “seals” the coffee, keeping all the aromas and oils in it.
  3. If you are buying a Turk for the first time, take one with a funnel-shaped top. With it, you will have a few seconds head start to save your drink - after all, the foam in it rises a little slower.
  4. Pay attention to the handle of the ceramic Turk. Firstly, it should be comfortable, not slip in your hand, not scroll and not heat up. Secondly, take a closer look at the place where the handle is attached to the Turk itself; this is the weak point in all Turks, regardless of the material of manufacture.
  5. As for the size of the Turk, choose a container exactly for the number of cups you are preparing at a time. Remember the rule - the smaller the Turk, the tastier the coffee.

The volume of the Turks is usually indicated at the bottom. The best choice is for one to three cups of coffee. If you have a large group of people, don’t be lazy to brew coffee two or even three times in a small pot. The drink will be much tastier.

Reviews about ceramic Turks

It is no secret that a theory takes on a convincing form only when it is supported by practical evidence. Below you will find several confessions from several of our customers, owners of ceramic Turks - novice coffee lovers and already quite confident users. We asked them to share their impressions after the purchase.

Let's see if they liked the ceramic cezve.

Oleg, has been using a ceramic Turk for 1.5 months

— I’ll say right away that this is not my first Turk. I brought the first one from Turkey. Copper, forged, excellent little thing. I made coffee only in it, got used to it like a real barista. I really liked it myself, and my friends also really liked my coffee. After several years of use, I noticed that the inner coating was cracked. I read that it can be harmful to health. Now it sits in the closet and decorates the kitchen. The next one was clay, but something didn’t work out with it.

And this beauty and I have had complete mutual understanding since the first coffee we brewed together. I don’t treat it particularly carefully, no. Well, unless I throw it on the floor in a big way, yes.

Maryana, has been using a ceramic Turk for 3 months

“I, like all impressionable women, chose a Turk based on her appearance. And let me tell you, it's something. I am happy every morning when I put it on the stove. Unfortunately, the first use had to be postponed because I did not think about the fact that my induction cooker would require an adapter. I had to order that too. But every cloud has a silver lining; with the adapter, my favorite ceramic saucepan, which had been idle, and my hand didn’t raise to throw it away, came back into use.

Alina, has been using a ceramic Turk for 2 weeks

— I am a long-time coffee lover, I also have a lot of Turks. But this one, I feel, will become one of my favorites. My husband is a conservative and has been drinking the same variety for many years. And I’m an experimenter, and I mix varieties and add spices to suit my mood. And try it, it's very entertaining! I don't like cinnamon, but I love cardamom. In the cold season I add a pinch of cayenne pepper, it’s something!

For me, coffee in a ceramic pot is special. Somehow homely and very soulful.

Vitaly, has been using a ceramic Turk for 2 months

— I bought it as a gift for a friend, he is a collector. And he hit the bull’s eye, saying that he himself had been eyeing a similar one for a long time. We tried it right away, and I immediately, without leaving the couch, ordered one for myself from the same online store!

- What do you like? What delicious coffee and no hassle. Prepared, drink. While drinking, the Turk has cooled down, you can rinse it. I also use detergent once or twice. What is there to wash?

Andrey Alexandrovich, has been using a ceramic Turk for 6 months

— My wife and I fell in love with Turkish coffee after a trip to Istanbul. For us, making coffee is a real ritual. First, I grind the coffee – I bought a special grinder while traveling, then I prepare it. With the copper Turk I was somehow uneasy all the time. I am a slightly suspicious person, I checked everything for cracks, waited for harmful substances to begin to be released. That’s why we now use copper for decoration, but a ceramic pot is safe and it’s safer to use it.

The coffee always turns out good. Well, maybe the first few times you need to get used to it, sometimes you run away. And now - no problem. I can’t do it with my eyes closed, of course, but with my left eye – easily!

All clients mentioned the ease of use and ease of maintenance of the ceramic Turk. They also noted the excellent taste of coffee prepared in a ceramic pot.

When used carefully, a ceramic pot will give you many cups of great coffee. Enjoy every sip, savor every moment.

Popular manufacturers

Many gourmets know that the perfection of coffee is influenced by many factors, including the quality of beans, water, and utensils. Manufacturers are responsible for the quality of cookware. A certain percentage of coffee lovers are sure that the best Turks are produced to order in eastern countries. However, the price for such an exclusive item sometimes exceeds all reasonable limits.

Cezves made by other craftsmen, for example from Brazil, are no less in demand. Among the many brands, Ceraflame occupies a special place, specializing in the manufacture of ceramic tableware of various categories.

How to brew coffee in a ceramic pot on the stove

A ceramic cezve allows you to get a rich and aromatic drink. Its thick walls heat up evenly, so the coffee is extracted efficiently, the ground powder imparts all the taste and aroma to the infusion. Therefore, ceramic Turks successfully compete with copper ones. Cooking recipes can be given in different ways. We offer our own algorithm that will help you prepare a strong and invigorating drink.

Cooking procedure

  1. Prepare a ceramic cezve. If it is new, wash it thoroughly with warm water and wipe dry.
  2. Place the finest grind coffee in a Turk, at the rate of 10-12 grams per 100 ml of water. This is approximately 2 full teaspoons with a small slide. This proportion will give a strong drink; if you want to make it less intense, use less powder.
  3. Do you drink coffee with sugar? Then put it with coffee. Approximately 1 teaspoon.
  4. Pour cold water into the Turk. It will require 2/3 of the required volume. To accurately measure the required portion of liquid, first pour it into the cup from which you plan to drink coffee, and then pour most of the water into the coffee pot.
  5. Set the Turk over low heat. If possible, use a flame spreader to help the drink heat evenly and slowly.
  6. As soon as the foam begins to rise, remove the ceramic pot from the heat.
  7. Transfer the risen foam into a cup.
  8. Add the remaining water from the cup to the Turkish cup and stir the coffee with a long-handled spoon.

  11. Carefully pour the drink into the cup where you previously placed the foam.

Your coffee is ready to enjoy.

Rules for preparing a delicious drink

Experts say that good coffee does not need additives. To prepare it, you only need clean water and high-quality grains. It is these components, when combined with each other, that turn into a divine drink that captivates not only with taste, but also with aroma.

How to brew coffee at home without a special coffee machine? Technically everything is very simple, but in reality it is not always feasible. We are talking about choosing the coffee beans themselves. This product of truly high quality and freshness is difficult to find in a country where it is not produced. The packaging always bears the date of packaging and expiration date, but before this very packaging, the grains could have been stored for a long time, first at the supplier, then at the manufacturer itself, and so on along the chain to the store.

To buy good bean coffee, you can look for the nearest roasting shops that sell freshly roasted coffee to order in any quantities, even 100 grams. You can learn how to roast green beans yourself, then you will always have a fragrant ingredient for an invigorating drink at hand.

It is better to purchase 100% Arabica, it gives a pronounced aroma, rich foam and mild taste.

Robusta, of course, invigorates well, but has a rougher taste, with a pronounced bitterness. Once coffee beans are found, they are ground. If a Turk is used to brew the drink, and this is a traditional utensil, then the grinding should be fine. The smaller the particles, the more fully they extract their taste and aroma from the water.

The average proportion of ground beans per 100 ml of water is 1-2 tsp. Sugar is added to taste and desire. It can be regular white or reed. To brew coffee correctly, you need a good Turk with the following characteristics:

  • made of copper with a safe internal coating;
  • with a wide bottom and the narrowest neck in the form of a funnel;
  • with a long handle made of material that does not conduct heat.

To brew coffee, special devices are sometimes used that allow you to prepare the drink on sand. These are wide and deep heated containers, into which a thick layer of sand is poured, which heats up evenly. When the Turk is immersed in hot sand, the drink is brewed. This is a very colorful way to brew coffee that requires some skill and patience.

The volume of Turka should ideally correspond to the usual portion of the drink

Brewing coffee on the stove in a Turk is easier and faster.

How to brew natural coffee

Basic Rules:

  • use clean drinking or spring water;
  • warm the Turk before filling with ingredients;
  • pour ground grains only with cold water;
  • do not allow it to boil.

Brew the drink only over low heat; after combining the ingredients, be sure to stir them so that grain particles do not float on the surface of the water. After the first foam appears, the Turk is removed from the heat. Repeat the technique 2-3 more times. The brewed drink is poured into cups after 1-2 minutes of infusion.

Coffee with foam can also be prepared in a cup without a Turk. To do this, boil spring water in any container. Pour boiling water over a cup and immediately pour a portion of ground grains into it and brew with hot water. Mix quickly and cover the cup with a lid or saucer. After 3-4 minutes of infusion, the coffee is ready. For this option, a special finely ground product is suitable, for example, live coffee for brewing in a cup.

Rules for using ceramic Turks

Utensils have their own rules and limitations that must be taken into account before you start making coffee.

  • Ceramic cezves are suitable for making coffee on a gas or electric stove. They make coffee on sand and even in the microwave.

Ceramic cannot be used on induction cookers. We wrote about Turks for induction cookers in this article.

  • Glazed ceramics do not like sudden temperature changes. Before washing the Turk after use, let it cool thoroughly.

Never place a very cold cezve on a hot burner.

  • Clean dishes using warm water and non-abrasive detergents.
  • Ceramic Turk is not afraid of fire and heat, since special fire-resistant ceramics are used for the dishes, however, it remains fragile and does not withstand impact loads well.
  • You can warm up an empty cezve over a fire, just like you can caramelize sugar in it, provided that the inner coating of the cezve is not made of glass ceramics.

Features of operation

Ceramics do not tolerate sudden temperature changes. To avoid cracks in the dishes, you must follow certain rules when cooking.

The flame spreader will protect the dishes from overheating on the gas stove. On electric models, it is necessary to use the smallest burner, the area of which will not be too large for the bottom of the cezve. In the case of an induction cooker, you will need a special ferromagnetic adapter. The glass-ceramic surface is ideal for making Turkish coffee, as it heats up evenly and does not require any additional devices.

How to make coffee in a ceramic Turk on sand?

For those who want to taste real coffee according to a traditional oriental recipe, we provide a complete algorithm for preparing coffee on sand in a ceramic Turk.

  1. In a small cezve - up to 120 ml - put 1 scoop of ground coffee. A ceramic pot will heat up more slowly than a copper one, so it’s better to take the minimum size pots.
  2. Pour cold water waist-deep into the Turk.
  3. Flatten the fine heated sand in a special electric fryer and place the Turk in the sand. This should be done in a circular motion, with pressure. As a result, most of the container will be immersed in sand almost up to the neck. If you couldn’t bury the Turk right away, dig it in with sand using a regular spoon.
  4. Wait 40-50 seconds, allowing the coffee to warm up.
  5. Then the Turk needs to be taken by the handle and moved in a circle, burying it in the sand. Leave for 5-7 seconds and change the position of the Turks again. Make sure that the surface of the drink is not agitated and the coffee does not splash out.
  6. After making 5-6 circles, leave the Turk with coffee in the sand until foam forms.
  7. Remove the container from the sand and let it cool slightly. You can stir the drink with a long-handled metal spoon.
  8. Place the Turk back into the sand until the foam rises again.
  9. After this, the coffee can be poured into cups and served.

To make coffee on sand, use a cezve with a simple, laconic design, without appliqués or voluminous decorations. All these decorative elements slow down the heating and disrupt its uniformity.

Algorithm of actions

Regardless of whether a person is puzzled by the question of how to properly brew coffee in a Turk on a gas stove or an electric one, the algorithm for subsequent actions will be the same and consists of the following steps:

  1. Preparing all the necessary ingredients and utensils: a supply of grains, cold filtered water, a cleaned and dry Turk, a heated cup.
  2. To brew the future drink, it is recommended to select only fresh grains, which cannot be stored for a long time after roasting.
  3. Selected grains are carefully ground. For coffee that is brewed in a classic way, the grind size does not matter.
  4. The amount of ground coffee is 1-2 heaped teaspoons per serving (depending on the strength of the drink you want to obtain).
  5. Boiled water is poured into the Turk with coffee, at a rate of 30 (espresso) to 150 milliliters (Americano) per person.
  6. Water should be poured no more than ¾ of the cup’s volume, as the coffee will “rise” during the brewing process.
  7. It is not recommended to be distracted by other matters while the process of cooking and solving everyday morning worries about how to brew coffee in a Turk on the stove is in progress.
  8. During cooking, it is very important to ensure that the liquid does not boil, and also to control the foam, which at a certain moment will begin to rise rapidly and can stain the stove.
  9. The prepared coffee drink is immediately poured into an already warm cup, and then, as the thick part settles, the drink is ready for drinking.

Coffee is brewed only over “low heat,” simulating the gradual heating of a pot immersed in hot sand.

A few tips for gourmets

For those who are willing to spend a few minutes of their lives preparing a good drink, we have put together a few tips that will make coffee in a ceramic Turk even tastier.

  1. If you drink coffee with sugar, use brown cane coffee. Mix it thoroughly with ground coffee, and only then add water. Your coffee will give a strong and high foam, and reveal the aroma in a new way.
  2. Before putting it on the fire, warm the Turk under running hot water or by placing it in the microwave for a few seconds. Ground coffee placed in a heated cezve acquires a rich and intense aroma.
  3. The spoon you are going to use to stir the coffee can be pre-cooled in the refrigerator.
  4. If you are preparing a drink with spices, then add the hard ones immediately with ground coffee, and leave the ground coffee until the drink is ready. They are added when the coffee is removed from the stove.
  5. To help the grounds settle faster, add a few drops of cold water to the finished coffee.

A ceramic pot allows you to prepare coffee that is as rich in flavor and aroma as possible. This occurs due to sufficient extraction of the ground powder in a thick-walled container. The ceramic pot has written a worthy page in the coffee book of our civilization, so we should take advantage of the properties of this utensil and ancient recipes to treat ourselves to a delicious drink.

Delicious cooking recipes

There are many options for making Turkish coffee on an induction and conventional stove. There are many non-dairy options that are just as tasty:

  1. Eastern style. Perhaps the most common cooking option. The main rule is that the drink cannot be boiled. In the countries of the Middle East, the Turk is not placed on fire; there, hot sand acts as a heating element. Many people manage to replicate these conditions at home: pour clean river sand into a deep cast-iron frying pan and turn on low heat. Add a teaspoon of coffee to 100 ml of clean water.

  2. Caribbean style. For lovers of unusual tastes. Pour a spoonful of finely ground Arabica coffee into a Turkish cup, then add orange zest, cinnamon, vanilla sugar and ground cloves. Pour in cold water and cook until a thick foam forms.
  3. In Turkish. A very popular option. A serving consists of 70 ml of water, a heaped spoon of coffee and sugar to taste. Turku is taken from silver or copper; it is believed that only such a cezve will produce a natural oriental drink. Add coffee, sugar or salt to the Turk - at your discretion, stir, pour in ice water. Remove from heat once foam forms, wait a minute and return to heat until foam forms again, and so on up to four times. Drink the drink in small sips.
  4. In Arabic. The ingredients needed are the same as in the case of the first two options. Fry the sugar until dark in a pot, pour in water, bring to a boil, add coffee, wait until the foam settles and bring to a boil again. You need to repeat these manipulations three times. Often aromatic spices are added to the brewed drink.
  5. In Brazilian. This country has rich coffee traditions, so this recipe should not be ignored. First, boil 150 ml of water, then cook cocoa on it until foam appears. At this stage, add coffee to taste, sprinkle salt on top and cover the Turk. Let the drink steep for a couple of minutes. Bring the coffee back to a boil, pour into a cup and top with whipped cream. If desired, you can add a couple of drops of dark rum or liqueur.
  6. In Viennese. Boil coffee using any classic method, add heavy cream whipped with sugar. If desired, vanilla or chocolate chips are added - depending on who you like.
  7. Cinnamon. Heat sugar with coffee and cinnamon in a Turkish pot without adding water for four minutes. Then pour in water, cook until foam forms, then pour part of the drink into a cup, boil again, drain, and repeat until all the drink has transferred into the cup. According to this recipe, the drink is obtained with a denser foam cap, the rich aroma fills with vigor.
  8. With chocolate, cardamom, honey. You will need a spoon of coffee, three boxes of cardamom, honey and chocolate to taste. First, grate the chocolate. Pour coffee with cardamom seeds into the pot. Pour in water and place on low heat. When the foam rises, remove the container from the stove. Add honey, stir. Gently spread the grated chocolate over the surface of the finished drink.
  9. With cognac. For 350 ml of water you need two teaspoons of ground grains, 50 ml of cognac and sugar to taste. Pour coffee into a pot, add hot water, bring to a boil, but do not boil. Pour into cups (this amount will make two servings), pour in cognac. A warming option suitable for cold winter evenings.
  10. With liquor. For those who do not like cognac, we can recommend a softer liqueur that harmonizes perfectly with the coffee aroma. You need to take cream or egg liqueur with a strength of 20%. Stronger varieties are at your discretion. The recipe itself is identical to the method for preparing a drink with cognac.
