Iced coffee.

Ice coffee is chilled black coffee. There are a huge number of variations of the drink; milk, cream, ice cream, sugar, syrups, and alcohol are added to it. But it differs from all other types of coffee in that it is always served cool, and often with ice. This explains the name iced coffee, which translated means ice coffee.

History of ice coffee

Back in the 17th century, Dutch colonists in the East Indies escaped the heat with chilled coffee. In Europe, a cool coffee drink came into fashion in the 40s of the 19th century and was called mazagran. During the long siege, the French soldiers of the garrison of the Algerian fortress of Mazagran fortified their strength with cool coffee sweetened with syrup.

Honore de Balzac explained his incredible ability to work by actively drinking coffee infusion. The great writer preferred to pour cool water over the ground beans and argued that such coffee invigorates better than coffee brewed using the usual method. Modern scientists have confirmed that the classic was right: coffee prepared using the cool method (cold brew) actually contains more caffeine and less acids.

The name “ice coffee” first appeared in the 20s of the 20th century, when a brutal advertising campaign for the drink was carried out by the Joint Committee on Coffee Advertising in the United States. Later, iced coffee entered the menu of large chains of fast food establishments: Burger King, Dunkin' Donuts, Starbucks.

Different countries have their own traditions of making and serving ice coffee:

  • in Australia - with ice cream and whipped cream, from time to time - with syrup;
  • in Canada, Ice Capps is popular - ice cappuccino, which is included in the menu of the large Tim Hortons coffee shop chain;
  • In Chile, iced coffee is called cafe helado. It features espresso with ice cream, vanilla and cinnamon;
  • in Germany the drink is called Eiskaffee and served with whipped cream;
  • in India, instant coffee is whipped in a blender with cool or frozen milk;
  • in the Land of the Rising Sun - with syrup and milk;
  • in Slovenia the drink is called ledena kava. It consists of a double espresso with vanilla ice cream, whipped cream, and topped with shaved almonds or grated chocolate;
  • in Sri Lanka - with cognac. The drink is certainly served at weddings.

During an exhibition held in Greece in 1957, Nescafe representative Dimitrios Vakondios did not find boiling water. Therefore, he beat instant coffee with a mixer (according to other sources - a dried coffee-milk drink) with sugar and a small amount of water. He filled the foam with cool water and added ice to the glass. This is how one of the most recognizable varieties of iced coffee, frappe, was prepared for the first time.

After the 2004 Olympic Games, frappe fashion spread throughout the world. Nowadays, the drink is prepared not only with instant coffee, but also with natural coffee; liqueurs, syrups, and whipped cream are added to it. Starbucks scientists have invented the Frappuccino drink. Unlike frappe, it is not served with whole ice cubes, but is whipped with a blender until the ice turns into crumbs.

You can prepare a coffee base for iced coffee using several methods:

  • traditional method - coffee is boiled using any method, then cooled and served with ice cubes;
  • quick cooling – freshly brewed coffee is immediately cooled using a heat exchange system;
  • cold brew - ground coffee is poured with water at room temperature in a ratio of 1:4 or 1:5 and left for 3-24 hours. Then the drink is filtered and combined with ice. This method was used by Balzac;
  • cold brew “hot bloom” - coffee is poured with a small amount of hot water, and when gas bubbles come to the surface, cool water is added. After the gas is removed, extraction proceeds more evenly;
  • slow-drip cold brew - cool water slowly drips onto a coffee pill, and after passing through it, flows into the vessel;
  • Japanese method (flash brew) - coffee, which is boiled in a Chemex or pour-over, is poured straight onto the ice;
  • freezing – brewed coffee is frozen and then topped with milk before serving.

Alternative methods of brewing coffee

Pour over is a brewing method in which hot water passes through ground coffee in a special funnel with a paper filter. In this case, the strength of the drink can be adjusted by reducing or increasing the amount of ground coffee used. This method is also called Hario or V60 (Hario V60 is a device for brewing coffee using the pour-over method).

French press is the name of a device for making coffee, as well as the method of making coffee by infusing and squeezing. It is believed that the French press allows you to reveal the real taste and aroma of exquisite varieties of coffee. A flat bottom with three holes in this funnel promotes more uniform extraction. Due to the holes, the water lingers a little in the funnel and additionally brews the coffee, which contributes to the richness of the taste.

AeroPress received the name “home espresso” for its operating principle, which is similar to preparing espresso in a coffee machine. A drink prepared in an AeroPress turns out a little cloudy, but the taste is rich and dense.

Siphon

Hot water in the siphon passes through the coffee under pressure. The drink prepared in this way is visually pure and tea-like, but at the same time retains all its inherent shades of taste and aroma.

Preparing a coffee drink in a Chemex allows the acidic coffees to develop. At the same time, the sweetness is emphasized and the excessive bitterness of the drink is smoothed out.

Ingredients for iced coffee

To make iced coffee, it is better to use cheap 100% Arabica coffee. If milk, cream or ice cream is added to the drink, then blends with 10–20% robusta are also suitable.

Grinding depends on the manufacturing method. But you shouldn’t grind the grains into dust: there should be no grains of grounds in the drink. When brewing coffee in a French press or Turk, the drink will have to be additionally filtered.

Roasting level – light or medium (Viennese). If the coffee is roasted very dark, it will be very bitter, but when combined with milk, the taste is not for everyone.

Water for both coffee and freezing should be bottled, with a mineralization range of 75–250 mg/l, normal – 150 mg/l.

Milk, cream and ice cream can be of any fat content.

Technology Basics

The basic rules for making iced coffee differ little from the requirements for brewing coffee in general, however, the technology for making a cool coffee drink may differ from the traditional one.

  • The main rule is the choice of ingredients. A good coffee drink can be made from instant coffee, but this is not the best choice. If you want iced coffee to be truly tasty and aromatic, use only natural coffee, beans or ground (depending on the recipe).
  • Coffee should be brewed correctly. The basis for preparing iced coffee is most often strong black expresso or Turkish coffee. To obtain strong coffee when brewing it in a Turk, you need to bring the drink to a boil several times, but do not boil.
  • To prepare a refreshing coffee drink, brewed coffee is cooled and filtered - no coffee grounds should get into it.

Manufacturing process

Vietnamese iced coffee is perhaps the same face of Vietnamese cuisine as pho bo soup! This is what is served everywhere, and what you must experience in Vietnam!

The climate of Vietnam is very hot, so they drink Vietnamese iced coffee all year round and at any time of the day. It must be served in large glasses filled with ice, with a straw and a very, very long teaspoon. There is ice of all sizes. In Vietnam, they even sell special condensed milk to make Vietnamese iced coffee! Well, I won’t insist on condensed milk, but I would like to definitely note the point that to make this drink with a real proper taste you need Vietnamese coffee.

In the glass in which we will brew coffee, put 2 tablespoons of condensed milk, or even more. Don’t be afraid, nothing will stick together with this amount of condensed milk. Ice later removes the excess sweetness.

Pour 2 teaspoons of coffee into the filter installed on the glass for making Vietnamese coffee, level it and tamp it with distemper.

Fill the filter with boiling water over the tempera and close the lid. We wait until the coffee drips through the filter.

Fill a tall, narrow glass about three-quarters full with ice.

Stir the finished coffee with condensed milk.

What can you add to iced coffee?

Well-prepared iced coffee is a delicious drink in itself, mixing the softness of milk and the slightly bitter or sour color of coffee (depending on the variety and type of consistency), but test lovers can try adding other ingredients to their own taste.

  • Cinnamon (you can brew coffee with a cinnamon stick or sprinkle it on a ready-made cocktail);
  • Whipped cream for topping;
  • Cream, which replaces part of the milk, 2-3 teaspoons;

How to make cappuccino coffee?

The basis of the drink varieties is espresso. If you do not have a coffee machine or coffee maker, it is recommended to use a regular Turk. This does not change the composition of the cappuccino itself. It is advisable to grind coffee beans immediately before brewing. The degree of grinding is average, since large particles will not have time to transfer the necessary substances, and small ones will add bitterness to the solution. Next, you need to brew strong coffee and pour it into a hot cup.

By this time the milk should be frothed and properly frothed. It is advisable to use an automatic cappuccino maker or at least a manual one. If you don’t have it, you can use a whisk, mixer, or French press. Beat until a homogeneous fine foam is obtained. Remove large bubbles by gently tapping the bottom of the container on the countertop.

The traditional recipe involves adding ⅓ of the total volume of hot milk. The milk foam is laid out last. At home, an intermediate layer is often not added. The surface can be decorated with available spices and herbs. Latte art and chocolate topping have become widespread.

How is cappuccino prepared in a coffee machine?

When making a drink in a machine, you do not need to measure the exact amount of ingredients. In special containers, just pour grains or powder (depending on the type of machine), pour water and milk. Pressing one button will be enough to get a flavorful drink.

How to make cappuccino in a Turk?

Sequencing:

  1. Grind the coffee beans with a coffee grinder.
  2. Pour 7-10 g of powder into a Turk, add sugar if desired.
  3. Pour 30-60 ml of cold purified water.
  4. Place on the stove over low heat.
  5. You can’t boil the liquid, just bring it until bubbles appear and set it aside for a while.
  6. Repeat this way 3-5 times until the coffee foam is thick enough.
  7. Pour the finished espresso into a cup or glass heated with boiling water.
  8. Add hot milk.
  9. Place a layer of foam on the surface.
  10. Decorate as desired.

With soy milk

Ingredients:

  • ground coffee – 1 tsp;
  • purified water – 60 ml;
  • sugar - to taste;
  • soy milk – 60 ml.

To prepare the drink you need to make espresso. If sugar is used, it is added to the Turk in advance, and when brewing coffee in a coffee machine, it is mixed with the finished coffee. Pour the drink into a warmed cup. Whisk the milk into a fluffy, stable foam and place on top. If desired, you can use additional ingredients.

Ice cappuccino

Ingredients:

  • espresso – 60 ml;
  • milk with fat content 3.2% – 200 ml;
  • ice – 8 cubes;
  • “Sugar cane” syrup – 10 ml;
  • chocolate chips - for decoration.

How to cook:

Prepare coffee and milk as for a traditional cappuccino. Place espresso, 5 ice cubes and syrup into a blender. Grind and beat everything. Pour 100 ml of milk into a cocktail glass with a volume of about 400 ml, add the remaining ice, and pour the mixture obtained in a blender. Fill the cup to the brim with milk foam. Decorate with grated chocolate or topping.

Chocolate cappuccino

The easiest option is to prepare coffee with milk according to the traditional recipe and add about 40 g of grated chocolate per serving. A more complex version of the recipe involves mixing espresso with chocolate syrup or sweetness melted in a water bath. Next, milk foam is laid out, and grated shavings are sprinkled on top. Additionally, you can add cinnamon or vanilla.

Nut cappuccino

Ingredients:

  • cappuccino – 375 ml;
  • nut syrup – 20 ml;
  • walnut – 5 g.

Cappuccino is prepared in a coffee machine or Turkish coffee machine in the traditional way. It is permissible not to add sugar. It is recommended to mix the syrup with coffee, grate the walnuts and sprinkle them over the milk foam.

Cappuccino with alcohol

Ingredients:

  • espresso – 1 tbsp.;
  • milk – 4 tbsp. l.;
  • vodka – 2 tsp;
  • orange juice – 1 tbsp. l.;
  • powdered sugar – 10 g;
  • cinnamon – ¼ tsp.

Before brewing espresso, add cinnamon to the ground coffee. The milk can be preheated or frothed cold. Mix everything except foam and powdered sugar. Then place the first one on top of the coffee, and sprinkle the second one on top of the drink.

Traditional iced coffee recipe

To make one serving, brew double espresso, 60 ml. If you like your coffee sweet, add sugar to your hot coffee because it will dissolve more terribly in an icy environment.

One teaspoon “without a slide” contains 3-4 grams of coffee, “with a slide” – about 6 grams. For a double espresso you need 14 grams of coffee, which means we take approximately 2.5 heaped teaspoons of ground coffee. Or 2 tablespoons of coffee beans, if you grind it.

Add 200 ml chilled milk to the espresso. Place ice cubes in a glass and pour coffee with milk.
