Properties of cold coffee

Does iced coffee differ from traditional coffee in its properties and characteristics?

  • Calorie content. The more milk, sugar and ice cream in a recipe, the higher its calorie content. As for the basic nutritional value, for both cold and hot coffee without sugar and other additives it is 2 kcal per 100 ml of drink.
  • Caffeine content. Depends on how the coffee is prepared. 100 ml of chilled espresso contains from 90 to 180 mg of caffeine. Oriental coffee contains from 80 to 150 mg. Cold brew contains from 150 mg of caffeine per 100 ml, it is much stronger than traditional recipes.

As for quenching your thirst, coffee cocktails will definitely not help you with this. Recipes high in sugar only make you thirstier.

It is not known for certain when ice cappuccino originated. But information has reached our days that he helped Dutch colonists in the East Indies in the 17th century. Europe learned about it in the 19th century and 40s.

Now these drinks are popular for their numerous recipes. Therefore, those who love iced coffee can prepare and enjoy the incredible, energizing tastes of the drink.

One study confirmed that the oriental root modulates the firing state of neurons, thereby making them ready to make an optimal response to external and internal stimuli.

  • Natural energy drink. One of the main reasons for consuming this pure espresso substitute. It reduces stress and fatigue, increases vitality and immunity, although it contains less caffeine than traditional coffee.
  • Strengthens brain functions. In particular, drinking coffee with ginseng extract improves concentration and memory abilities.
  • Improves blood circulation and reduces cholesterol levels. The active substances in ginseng stimulate the physiological processes through which our body produces energy by burning sugar and fat.

Also from a biological point of view, it was discovered that some molecules contained in the drink have a vasodilating effect and promote blood circulation.

Coffee with ginseng: contraindications

In general, for those who are healthy, there are no real contraindications to drinking ginseng coffee; in fact, there is so little caffeine in the drink that it eliminates the possibility of developing any form of addiction. Excessive consumption, such as more than four cups per day, can cause headaches, insomnia, increased heart rate and increased blood pressure.

Drinking the drink is not recommended for those who suffer from severe hypertension, duodenal ulcers or severe insomnia. In these cases, even a small amount of the drink can have unpleasant consequences.

Coffee with ginseng for weight loss

Ginseng stimulates metabolism, reduces appetite, and improves digestion. Its extracts are included in weight loss formulations. But such a drink will only help if you use the right ingredients:

  • Ground coffee;
  • Ginseng extract;
  • Sweetener, if otherwise tasteless.

Most instant concentrates or vending machine coffee-ginseng drinks (found in Europe) contain large amounts of sugar, and the ginseng extract is replaced with flavoring. In addition, they often add:

  • Vegetable cream;
  • Powdered instant coffee;
  • Hydrogenated vegetable fat;
  • Flavors;
  • Food colorings.

There is nothing in this set that will help you lose weight, and even vice versa. So if you want to lose weight with ginseng coffee, be smart and choose natural products.

What it is

The raw material for tapioca is the tropical cassava plant, or rather its roots. The process of preparing the dish itself begins with soaking the tubers. They are kept in water for several days, after which they are ground and mixed with liquid again. Gradually, starch flakes, of which there are about 30% in the shoots, begin to settle to the bottom.

Long-term production is associated not only with the peculiarities of starch extraction, but also with the presence of hydrocyanic acid in the tubers. This cyanide, dangerous to human life, is evaporated during manipulation, and the processed tapioca becomes harmless.

Tapioca with blueberries and yogurt
The procedure is repeated until purified powder remains, which begins to be simmered over low heat in a metal bowl. The substance is constantly stirred, and when heated it curls into small balls. It is these lumps of starch that are called tapioca. In this form or in the previous state of flour and flakes, the product can be found in the store.

The composition of the resulting substance cannot be called valuable or rich. These are practically only carbohydrates, choline, which is involved in normalizing cholesterol levels, some B vitamins, potassium, calcium and phosphorus.

Initially, the granules are white with slight transparency. But on sale you can find tapioca in a variety of colors. Adding dyes has a purely aesthetic purpose, so the balls become visually much more attractive.

The benefits of tapioca are not in the presence of any components, but in their absence. There is no gluten in starch, and the low calorie content of the product (about 130 kcal per 100 grams) does not harm the figure, so the balls are suitable for dietary or medical nutrition. The flour produced has another valuable property - starch is easily absorbed by the body, gives a feeling of fullness for a long time, and improves the functioning of the gastrointestinal tract.

Tapioca is an extremely popular product in Thailand.

What is the name of cold iced coffee: Cold brew

The most popular cold brew coffee, which can easily be prepared at home, is “cold brew,” which means ground coffee beans are brewed using cold water.

This method is relatively new. It can be prepared using the Toddy method

(Toddy), which uses a special flask, or a simple method when you can use a regular
French press
.

This brewing method was invented because the usual method of creating cold coffee by refrigerating or adding ice to hot coffee spoils the taste of the drink. Cooled coffee loses its aroma, and coffee with ice added will not be as dense.

The cold brew method involves pouring cold water over ground coffee beans and brewing for 12-24 hours.

The advantages of this drink:

  • Low acid and oil content
  • High content of caffeine, phenol and tannin, which tone up
  • This drink has a sweeter taste than regular espresso.

What ingredients are used to make iced cappuccino?

There is no one specific cooking method. The recipe and technology may differ slightly, resulting in drinks with different organoleptic properties.

The classic cold version is prepared from the following products:

  • Coffee. It is advisable to choose natural roasted Arabica beans, although some recipes suggest using instant granules. But true coffee connoisseurs know that chemical sublimate cannot be compared with the rich taste and amazing aroma of freshly ground beans. A combination of Arabica (70%) and Robusta (30%) is also allowed.

If you brew coffee in a Turkish coffee pot, be sure to strain the finished drink several times so that particles of grounds do not get into the glass.

  • Milk. Pay attention to the fat and protein content. Professional baristas advise using milk with a fat content of 3.2%. In this case, the cappuccino will have an excellent taste and a delicate, airy foam. Many people do not pay attention to the protein content in milk, but this indicator determines how the final product will turn out. Milk with a nutrient concentration of at least 3% is better.
  • Purified water. Usually, for many, the quality of the coffee beans comes first, while another important ingredient that is part of the classic recipe is ignored. We are talking about water, the quality and composition of which influence the taste characteristics of ice cappuccino. It should be soft, cleaned, cold, without foreign impurities, with average mineralization. There are several options for where to get a suitable liquid - buy it in a store, filter it at home, purify it by freezing.
  • Ice cubes. At home, they are made from purified water, which was mentioned in the previous paragraph.

If you use the classic recipe and prepare cappuccino according to all the rules, you will end up with a delicious, tonic drink that will perfectly combine the bitterness of coffee and the tenderness of milk. Those who like to experiment can add other ingredients if they wish:

  • Cinnamon. Spice sticks are added during the coffee brewing process, and you can also sprinkle ground powder on the finished drink.
  • Whipped cream. They are used as a topping for coffee cocktails. It is better to take a homemade product with a fat content of at least 30%, but some prefer ready-made foam from a can.

It is permissible to replace some of the milk with heavy cream to make the drink more tender and tasty.

  • Syrup. Choose any flavor that appeals to you: coconut, vanilla, caramel, chocolate, almond.
  • Liquor. Fans of alcoholic cocktails should like the combination of cappuccino with any cream liqueur. Try also different variations with caramel, vanilla, chocolate liquor.

Iced coffee goes great with ice cream. After the cappuccino is poured into a glass, a scoop of any ice cream is placed on top and sprinkled with cocoa powder. This cocktail is served with a straw or a teaspoon, and you can offer macaroons as a refreshing drink.

History of the drink

Coffee was introduced to Vietnam in 1857 by a French Catholic priest in the form of a single Coffea arabica tree. However, Vietnam did not become a major exporter of this grain until post-war reforms. Currently, many coffee farms exist in the central part of the country.

Vietnam is currently the largest producer of Robusta, the second largest in the world. The drink has been adopted with regional variations. Due to limitations in the availability of fresh milk (as the dairy farming industry was still in its infancy), the French and Vietnamese began using sweetened condensed and dark roasted coffee.

Drink preparation technology

Iced coffee is prepared according to the same rules as a regular drink. But the technology for preparing ice cappuccino may differ slightly from the classic recipe. One of the most important rules is choosing the right ingredients. Of course, you can prepare a tonic base from soluble granules, but it is better to give preference to natural grains.

The basis of the drink is strong black coffee. If you brew espresso in a Turk, do not bring the contents to a boil. As soon as bubbles begin to appear on the surface, turn off the stove, let the coffee stand so that the sediment sinks to the bottom, and then return the Turk to the fire. The procedure should be repeated 2-3 times. The finished espresso must brew, and then it is thoroughly filtered so that no particles of coffee beans get into the glass.

It’s not difficult to prepare an iced drink with milk at home, as long as you have a mixer or blender on hand. Brew espresso according to your favorite recipe, strain the finished drink, and cool. Pour into a blender bowl, add 5-6 ice cubes, pour in a few spoons of milk, 5 spoons of heavy cream. If you like sweet coffee, add sugar or condensed milk. Beat all ingredients thoroughly until the ice turns into crumbs. Pour the cappuccino into glasses and garnish with chocolate shavings if desired. You can pour in a little syrup and top with whipped cream.

Another popular homemade recipe for ice cappuccino with caramel:

  1. Fill a drink glass one-third full with ice.
  2. Pour in caramel syrup (amount depends on your preference).
  3. Add cooled espresso, stir all ingredients with a bar spoon.
  4. Pour the whipped cold milk into the glass so that about 1 cm remains at the top for cream.
  5. Using a dispenser, apply a pattern of caramel syrup on top of the creamy foam.

Ingredients for making iced coffee with juice

  1. Fruit juice (cherry, raspberry, strawberry or any other of your choice) 4 vodka glasses (or 200 ml.)
  2. Granulated sugar 8 teaspoons
  3. Brewed coffee 5 tbsp. spoons
  4. Cream (at least 25% fat) 100 gr.
  5. Ice 20 cubes
  6. Ground cinnamon 10 gr.

1Prepare crushed ice.

In order to prepare crushed ice at home, you need to take ice cubes, put them in a thick plastic bag, and tie it well. Next, place the bag on a cutting board and cover it with a clean kitchen towel on top. Then we take a hammer to beat the meat and begin to hit the entire structure very intensively, thereby breaking the ice into small crumbs. Remove the crushed ice from the bag and place it on a plate. Afterwards, you can put it in the freezer to prevent it from melting.

2We make coffee.

To prepare the drink, you must use brewed coffee. It is best prepared in a coffee maker, if you have one. Moreover, this coffee is very aromatic and tasty. But if not, we prepare coffee in a Turk or a regular saucepan with a non-stick coating. Pour 5 tablespoons of ground coffee into half a liter of cold water, preferably previously boiled. Place on moderate heat and stir a little. As soon as you see that the foam has begun to rise by 2-4 millimeters, you must immediately remove the container from the heat.

Next, cool the mass at room temperature. After this, the coffee must be strained through a fine iron sieve or gauze folded in several layers.

3Form the drink.

Take 4 clean glasses (these can be glasses for juice, whiskey or others of your choice). Fill each of them halfway with crushed ice. Next, pour in 2 vodka glasses of chilled coffee and 1 glass of the juice you chose. If you are not a big coffee drinker, then you can increase the juice content in the cocktail to 2 glasses. Then the ingredients will be used in equal shares.

4Whip the cream and complete the formation of the drink.

Place the cream in a bowl, add granulated sugar and beat the mixture with a mixer at high speed until so-called peaks form. The cream should become thick and airy, and the sugar should completely dissolve in it. Using a spoon, place the cream on top of the glasses. In order to lay them out figuratively and beautifully, you can use a culinary syringe or bag.

5Serve iced coffee with juice.

Sprinkle the surface of the cream with ground cinnamon to taste. Serve iced coffee with juice immediately after preparation. On top you can additionally decorate the drink with a berry or a piece of fruit from which we use juice. To do this, you need to make a cut in it and insert it into the neck of the glass. We complement the drink with a straw and enjoy its wonderful taste. Bon appetit!

Latte recipes

How to make an iced latte? If you want to treat yourself to a delicious coffee cocktail, you can use one of the recipes offered below.

There are 2 options for preparing an iced latte:

  • manually;
  • using a blender or shaker.

Let's look at each option in more detail.

Ingredients

To make an iced latte (it doesn’t matter whether by hand or in a blender) we need:

  • milk - 100 ml,
  • espresso - 60 ml,
  • syrup - 10 ml,
  • ice - 8 cubes.

Manual cooking recipe

Brew espresso and cool it. Heat the milk until foam appears, cool. Pour the cooled milk from step 2 into an Irish glass. Add syrup

Depending on preferences, it can be currant, chocolate, vanilla, etc. Carefully place ice cubes into the glass. Just as carefully, so as not to mix the layers, pour the chilled espresso from step 1 down the side of the glass. As in the classic version, the best ratio of coffee to milk is 1:3. To add beauty and an additional note of aroma, you can sprinkle the cocktail with cinnamon.

Some even sprinkle with grated chocolate or even decorate with whipped cream.

Recipe for cooking in a blender or shaker

In this case, we proceed almost identically to cooking by hand, except that we do not worry about mixing the layers. Those.:

  1. Brew espresso and cool it.
  2. Heat the milk until foam appears, cool.
  3. Pour the cooled milk from step 2 into a container (or shaker).
  4. Add syrup.
  5. Drop ice cubes into a glass.
  6. Add chilled espresso from step 1.
  7. Beat (mix) the resulting drink with a blender or shaker.
  8. Add ice.
  9. Just like in the manual version - decorate with cinnamon, grated chocolate or whipped cream.
