Not hot enough water

  • the coffee should rise three times, but not boil; as soon as a trickle of drink appears from under the head of foam, the cezve should be removed from the heat, otherwise the drink may run away;
  • After the third removal, the coffee can be poured into cups.

There are a lot of recipes, but among them two classic ones stand out - oriental and “gentle” coffee. For oriental coffee, robusta is used, preferably Ugandan, with the addition of sugar and cardamom. Cardamom is taken to taste, sugar - at the rate of one piece per 100 ml of drink. You need to brew coffee as usual, adding spices and sugar at the very end.

“Gentle” coffee fully corresponds to its name - it is a soft, sweet, very aromatic drink that will immediately captivate you with its taste. For preparation, you can use any type of robusta, but the best option would be Yemeni coffee, which will give the necessary softness to the finished drink. When brewing, you will need finely ground coffee, a small amount of sugar and ground cinnamon. When cooking, you need to add sugar, cinnamon, then coffee, and brew the drink according to the classic recipe.

For preparation, you can use different types of coffee, the recipe variations are very different. But it is very important to adhere to the classic brewing base, since it is this that creates the thickness and aroma of the drink, making it rich and very tasty. The choice of coffee type depends on personal preferences, but different types of Robusta are optimal for cezve. It is these varieties that provide the necessary richness and expression. Arabica is considered a higher quality variety, but it does not provide the necessary thickness and taste, so it is usually used in other brewing methods that are not so demanding in terms of richness.

Do not use beans that have been ground for a long time
