I have already written about orange raffa, however, then we talked about it as a citrus fruit, but in fact it is orange, because it is prepared with orange. Last time I told you how to make this type of coffee with orange syrup, but the best recipe ended up being with fresh orange. And this time we’ll talk about him in more detail.

It is the fresh orange that gives such a special taste to orange raf. And it seems to be perceived not even as an orange, but as something creamy - an incredible taste, I still never cease to be amazed by it. In addition, when you prepare coffee with orange juice and zest, there are no such problems as with syrup - the milk does not curdle. It is very easy to prepare and always produces delicious coffee.

Raf coffee - what is it anyway?

Raf coffee is more accurately called a coffee-based cocktail. Traditional raf coffee is mixed in a 1:2 ratio, where one part of coffee is divided into two parts of cream or milk.

The very idea of ​​drinking coffee with cream was born a long time ago, and its authorship was lost in the darkness of time. But raf coffee was first prepared in the 90s in one of the capital’s coffee establishments.

  • Participants in the events say that it came out in a small Coffee Bean store not far from Kuznetsky Most. There they sold grains, freshly ground coffee and prepared a drink. In the middle of the 90s of the last century, one of the regular guests named Raphael asked to make him “delicious coffee.” But he didn't like the traditional espresso recipe. The barista mixed espresso with cream, added vanilla sugar and steamed the resulting mixture directly in the cup. Rafael liked the purchased cocktail, and he began to actively order it.
  • Regulars of the establishment quickly appreciated the recipe and began asking to make coffee “like Raf’s.” The name of the recipe stuck, and that’s how the famous Raf coffee appeared.
  • Among the first baristas to prepare raf coffee was Tatyana Elizarova, who later became a two-time winner of the Russian Barista Championship and a European Favorite.
  • It quickly became widespread. The traditional recipe has been creatively processed and supplemented, and nowadays raf coffee is prepared using a variety of methods.

You can also find an alternative version on the Internet. In it, the first sip of raf coffee is attributed to the Emperor of China of the Lian era himself. They say that the Lord mixed coffee and full-fat milk, and fell asleep before tasting the drink. Flower petals fell into the cup, the awakened ruler drank his own coffee and felt a surge of vigor. Everything could be, naturally, but only in the 6th century, when the nuances of the Lian Dynasty, coffee had not yet become widespread, so it is unlikely that the ruler indulged in a cup of raffa.

Rough coffee recipe: classics of the genre and honey raf

In order to prepare raf coffee according to a traditional recipe, you will need a few ingredients.

  1. Freshly brewed espresso – 50 ml.
  2. Cream 10% - 100 ml.
  3. Regular sugar – 1 teaspoon
  4. Vanilla sugar – 1 teaspoon.

How to cook?

Honey raf, which is very popular among foreigners, is also prepared on the basis of a traditional recipe. In it, sugar is replaced with watery honey. Other ingredients and sequence of actions are the same as in the traditional recipe.

They say that the honey version was also invented in Moscow, in one of the nightclubs. In some coffee shops in Europe, this recipe is called Russian coffee.

Rough coffee is a creative recipe, and new versions of its production often arise. Lovers of unique flavors came up with orange or citrus raf. It differs from the ordinary one by the presence of light sourness, which enriches the flavor bouquet.

Orange raff can be prepared without juice, replacing it with orange sugar. For this production option you will need 1 teaspoon of vanilla sugar and 1 teaspoon of orange. Sugar is added to the hot mixture of coffee and cream, then everything is whipped using a cappuccino machine. In this version, the citrus sourness is actually not felt, just the smell of orange remains.

What does the drink consist of?

Its composition is very simple. The classic version presented to Raphael had only a few ingredients. Today, different cafes offer variations with different syrups. These are the components:

  • 25 ml classic espresso;
  • 100 ml 10% cream;
  • 10 grams of vanilla sugar or a mixture of vanilla and regular sugar in a percentage ratio of 50 to 50.

Subtleties of making raf coffee

To get a high-quality drink with a smooth and uniform structure, you need to know some secrets of craftsmanship.

  • The structure of the drink depends on the whipping method. Coffee shops have massive professional coffee machines, their cappuccino makers whip up raf to form the highest foam. The cappuccino maker of a home coffee machine may not have enough power, and the foam will be weaker.
  • Scientists recommend using a regular cappuccino maker for frothing coffee, not an automatic one. A mixture of coffee and cream can clog the tubes of the automatic cappuccino maker with small coffee particles.
  • As a result of the manipulations, you should get a gentle, homogeneous drink, smooth structure, with soft and high foam. The taste of raffa is creamy vanilla, with a distinctive coffee aroma.
  • Do you want a huge portion? Then increase the volume of cream and take two shots of espresso. Even if you only have 150 ml of cream and not 200, then still add double volume of coffee. Otherwise, the taste will be very weak and inexpressive.
  • At first, the raf was whipped directly in the cup. Modern baristas often do this in a pitcher, and then pour the drink into heated glasses.
  • Very heavy cream is not suitable for this recipe; the taste will be oily and the texture will be heavy. Therefore, it is better to dilute cream with a fat content above 15% with skim milk or even water.

Is it possible to make raf coffee at home?

The recipe can be prepared at home even without a coffee machine.

What will be needed?

  1. Strong coffee brewed in a cezve or brewed in a French press – 50 ml.
  2. Heated cream, the fat content of which does not exceed 15%.
  3. Sugar – regular and vanilla if you are preparing traditional raf.
  4. Honey, if you are going to drink honey raf.

How to cook?

  • Brew coffee and strain it through a strainer so that particles of grounds do not get into the drink. The sediment will interfere with the quality of the frothing and will spoil the taste and structure of the coffee.

  • Mix coffee, cream and sugar (honey).

Most likely, the foam will not be as thick as a drink from a professional barista, but the taste will be close to unique.

Raf coffee: characteristics and calorie content

Rough coffee is classified as a dessert drink. It can be consumed in the second half of the day, although Italians recommend drinking coffee with milk and cream only before lunch and never after meals.

Raf can be safely ordered in the evening, during a meeting with friends, or instead of an afternoon snack. Its calorie content is quite high due to the presence of cream and sugar. 150 ml of drink contains 135-150 kcal. Taking into account the trend towards larger servings in coffee shops, you can quietly eat up to 15% of your daily calorie intake. That's why raf doesn't need desserts.

The price of the drink will vary depending on the class of establishment and region.

In Moscow and St. Petersburg, you will have to pay 100 rubles or more for a serving of raf coffee. High-end establishments will require 200 rubles for 150 ml of this cocktail.

I love coffee. I drank and drink it in a variety of forms - dark, and with milk, with foamed and regular milk, I love coffee with cinnamon and other spices. Well, maybe I don’t like unsweetened coffee, I always add sugar, but everything else depends on my mood and current needs. And now I also tried citrus raf. And I fell in love with this new drink so much that I wanted to tell about it and share the recipe for citrus raffa on how to prepare it at home.

I tried citrus raf in “Dudnik”, there is such a chain of coffee shops, probably many people know about them. In general, I like the coffee there, but here I decided to try something new, the choice fell on citrus raf, and since then it has been such a pleasure to drink such coffee.

Differences from other coffee drinks

Classic coffee is:

  • espresso is the basis of most coffee drinks;
  • Americano – espresso with a portion of water;
  • cappuccino – espresso with milk;
  • latte – cappuccino with a double portion of milk.

Raf is made using espresso with low-fat cream instead of frothed milk. To make the taste and texture of the drink resemble ice cream or creme brulee, the ingredients are whipped together and laid out not in layers, but as a whole.

How to prepare citrus raf

But I don’t go somewhere very often, and it turned out that drinking citrus coffee exclusively in a coffee shop is not enough for me, so I wanted to know how to prepare it at home. Well, in general, I was just curious to find out what it actually contains - it has such an especially excellent taste, so soft and unusual. I started to figure it out.

Citrus raf is prepared in different ways. In the same aforementioned coffee shop they use orange zest, as I realized, and vanilla syrup. And milk, of course. Quite a strange combination, it’s true, but how delicious it all turns out! And in another establishment I ordered this drink, it contained citrus syrup.

I looked it up on the Internet, and it turns out that you can also add orange juice to citrus raf, either from tetra packs or freshly squeezed. That’s where I started my experiments with the citrus raffa recipe.

But here's what it turned out - orange juice curdles milk in coffee. As this became clear, I became preoccupied with finding orange syrup and thought that with it, everything would probably work out. I took it from a special store where everything for coffee is sold. Yes, and it curdled the milk.

I went back to looking on the Internet and found information that citrus additives curdle in coffee if it is very hot. Well, after that it became completely clear to me how to prepare citrus raf at home.

Recipe No. 1

To prepare we need to take:

  • 50 grams of freshly brewed espresso;
  • Cream – 20 grams (fat content

20%);

Sugar to your taste; Orange juice (preferably freshly squeezed) – 50 grams.

How to make coffee with orange juice

  • You need to chill the espresso first because coffee with orange juice is served cold.
  • Beat the sugar and cream with a mixer and add orange juice, pour the resulting mixture into a tall glass or glass.
  • Carefully pour our cold espresso along the blade of a knife into the glass, preferably so that the coffee settles in a dark layer at the bottom, and the juice and cream remain in the upper layers.
  • If you use thicker cream, you can make a more layered cocktail.

Citrus raff at home

First we prepare the coffee. I have a drip coffee maker, so I made coffee in it.

Whisk the warm milk, I do this with a small electronic milk whisk.

We put sugar in the coffee, and I also added a little cool milk so that the coffee is not hot, but warm. Then add orange syrup.

Finally, add steamed milk to the coffee.

The proportions are approximately the following: two parts coffee, one part milk. Although you can have more milk – it’s also tasty and depends only on personal preferences.

And one more important detail - you need to add a little orange syrup, about a tablespoon per glass, otherwise the milk in the coffee will curdle again. Well, it’s not so tasty when there is a lot of syrup - then it overwhelms all the other tastes in the drink, coffee and milk, and it’s no longer the same.

Features of making citrus raffa

By the way, when I tried to prepare a citrus raf recipe with orange juice, it seems that I also just added a lot of juice, and the coffee was very hot. So someday you can try making coffee with juice again, and it’s also interesting to experiment with orange zest, sometime if necessary.

Again, if you don’t really want to bother with whipping milk for citrus raffa, then you don’t have to whip it. Then we do everything exactly the same - add sugar to two parts of hot coffee, one part of cool milk and a tablespoon of syrup.

Here is a recipe for citrus raffa at home. I’m sure it can still be improved, and at the moment you can already enjoy this drink at home, which is, in fact, what I was striving for. And again, you may need my experience. Let's love coffee together!

UPD. I nevertheless tried to prepare citrus raff with orange zest and natural juice, and it turned out exactly the same, simply the best option!

So, let's prepare coffee, now I prepared it using a coffee machine, but this does not change the essence. Three little zests, squeeze the juice out of almost a slice of lemon to a volume of 200-250 ml, add them to the coffee together with sugar.

Then pour warm milk into the drink - the temperature should be such that the coffee ultimately comes out pleasantly warm.

I think if you add a little vanilla sugar to all this, it will be even better, and even without it, the citrus raf prepared using this method was enormously fun.

So it turns out, in fact, you don’t need anything special, just coffee, milk and an orange. At the same time, this time I used the most ordinary milk, fat content 2.5%, and not baked milk, as at first. So everything turned out to be so simple!

Prepare black coffee any way you are used to making it. Add caramel in any form, stir in a cup. It is best to use syrups, they will add sweetness. You can sprinkle with cinnamon, nutmeg, cardamom and other spices.

Caramel in coffee with milk

This is a more delicious preparation option, since the taste of burnt sugar goes well with the milky and creamy shades. You can do this:

  • Boil Americano, pour in milk, dissolve caramel, as an option - choose salty or sweet.

Be careful: if the sugar burns, it can be very difficult to clean the narrow-necked Turk! And in any case, immediately after cooking, at a minimum, fill the cezve with water so that the hardening layer does not stick to the walls.

Coffee with orange juice and caramel

An unusual but very interesting cocktail that is good both hot and iced. You can even add salty-sweet syrups. You need very little juice from an orange; the easiest way is to squeeze it from one or two slices directly into a cup, or take a good packaged one.

Brew espresso, dissolve caramel in it while it is hot. Pour the orange juice directly into the cup. By the way, nutmeg, cinnamon, and ginger go well with it. An extravaganza of multifaceted taste is guaranteed! But you should be careful with creamy milk additives, as they can curdle.

Caramel frappe

The pleasant sweetness and refreshing bitterness of ice-cold espresso is a great combination for hot days, and is very easy to prepare, in just 5 minutes. If you have a shaker, use it; in a pinch, a thermal glass will do, or even a jar with a screw-on lid, as long as the container is airtight.

Brew a small shot of very strong espresso or use instant granules. Add one and a half tablespoons of granulated sugar and a spoonful of caramel or syrup, as well as 4 tablespoons of water. Screw on the container and shake vigorously for about two minutes to form a dense, whipped foam. Place ice in a clear tall glass and pour in the coffee foam. Gently pour cold milk down the side to fill the glass to the brim. Serve with a straw; you can sprinkle spices on top or add topping.

Caramel coffee “Brulée”

There are 2 drink options. In the first case, all ingredients are whipped together, as it should be when developing raff coffee. In the 2nd option, instead of juice, an orange slice is taken and placed at the bottom of the cup, then chocolate and coffee are added and, finally, whipped cream with a pinch of cinnamon is added.

Coffee with orange liqueur

Orange liqueur and coffee mix well in this drink. The recipe contains ingredients for 4 servings. This coffee drink will come in handy on a winter evening in a cozy company of friends:

  • strong coffee - about 500 ml,
  • orange liqueur 150 ml,
  • a pinch of orange peel powder,
  • whipped cream 100 ml,
  • one orange slice per serving.

According to this recipe, coffee is combined with liqueur, and whipped cream with zest is placed on top. The composition is completed with an orange slice.
