How to make cheese coffee and is it tasty?

Cheese and coffee drink

The combination of coffee and cheese was invented a long time ago. Everything was prepared very simply. We cut two thin layers of cheese, poured coffee, stirred, added sugar and salt.

In establishments, this drink is prepared with espresso or Americano. To cook at home, you can use a Turk. First you need to heat it up, add ground coffee and sugar. Pour water into half of the Turk. Cook over low heat and do not bring to a boil.

Next you need to pour in the remaining water. When the foam rises, lift the Turk and wait until the drink cools down. These steps need to be repeated three times. After this, strain the coffee using a sieve.

Take a cup, place cheese cubes on the bottom and pour in coffee. Add sugar and salt as desired. You need to stir until the cheese dissolves. If you can’t complete the process, then let the cheese lie on the bottom. It adds spice to the drink. After you drink your coffee, you can eat the remaining cheese.

Raf coffee today

Today you can find several versions of the Raf drink. The original recipe was:

  • Creme brulee or caramel syrup was first poured into the cup, and then 35 ml of espresso made from Arabica beans;
  • the barista heated the 15% cream and mixed it with vanilla sugar, then whipped it into foam;
  • the finished coffee was often sprinkled with cinnamon for decoration.

At first it was made by whipping espresso, cream and vanilla sugar.
Many people will like the taste of “Raf” because of its delicate aromatic consistency. Along with Latte and Cappuccino, this drink has a creamy vanilla taste. It will be an ideal option for those who like not very strong milk coffee. For 150 ml of Raf coffee there are 135-140 kcal.

Experiments with Raf continue to this day. There are already several varieties of it: with double espresso, with honey, with lavender, with cold cream and whipped.

The coffee base is not always Arabica; you can take Turkish coffee, replace the cream with milk, and replace the vanilla with cane sugar.

Just like Cappuccino and Latte, this drink is most often prepared using espresso from fresh coffee beans. “Raf” differs from “Latte” in that the second type contains only espresso and milk. And the main difference from “Cappuccino” is the foam, which is whipped separately.

A proper Cappuccino should have a contrast: a clear line between the coffee and the thick foam. In Raf coffee, the emphasis is only on the correct milky-vanilla taste, so the espresso is whipped together with milk.

Cheese treat for those with a sweet tooth

Sweet coffee recipes are the most popular in the world. Therefore, let's look at how coffee with cheese can be prepared as a dessert. There are several options.

In the first case, this will require:

  • Espresso – 80 ml;
  • Chocolate spread – 30 g;
  • Processed cheese – 50 g;
  • Milk – 20 ml;
  • Brown sugar – 2 tsp;
  • Whipped cream - for decoration.
  1. The option is similar to the previous one: heat milk with cheese, chocolate spread and sugar. By the way, you can use cocoa powder instead of chocolate paste.
  2. Then add the finished espresso to the resulting mass and mix thoroughly.
  3. Pour the resulting mixture into cups and decorate with whipped cream.

An exotic version of your favorite treat will appeal to even the most sophisticated gourmet.

The second option is suitable for large celebrations and parties.

  • Espresso – 100 ml;
  • Processed cheese – 50 g;
  • Peanut butter – 30 g;
  • Sugar – 2 tsp;
  • Whipped cream;
  • Caramel syrup/topping – 10 ml.

Making this type of coffee is very simple, and the finished result looks impressive:

  1. Mix cream cheese and peanut butter;
  2. Pour in freshly prepared espresso;
  3. Pour into cups, add sugar to taste;
  4. Garnish the drink with cream and caramel topping. If desired, you can add cocoa powder or powdered sugar to the decoration.

Such a treat will look gorgeous at a festive feast. Experiment and get a new rich and invigorating taste!

Coffee with glitter and more

In the age of Instagram, for many chefs, bartenders and baristas, the appearance of food and drinks has become a cult. In the case of coffee, they usually experiment with cappuccino foam: it is easiest to add sprinkles or mix in dye; most often this is only a visual effect and is not particularly noticeable. But some baristas go further: they try to imitate the taste of cake or cheese in a cup.

Maria Sukhobskaya, author of the blog “Let's Slow Down,” walked through coffee places in St. Petersburg and found out where cappuccino shines brighter than the stars and where to go for unusual drinks in an uncontrollable desire for new impressions and photos for social networks.

The composition includes a standard mixture of Arabica and Robusta, but rainbow dyes are added to the milk. Color has no effect on taste. For free, you can make your drink even brighter by adding colored sprinkles, marshmallows or some kind of syrup. For this coffee, it is recommended to take “space” donuts, the glaze of which consists of white chocolate. You can arrange a food photo shoot on tables with lighting, the color of which changes at the request of the guest.

"Nitro Cold Brew" from "Character Coffee"

What's the trick: they make coffee with nitrogen. Price: 200 rub.

A post shared by Character Coffee (@characterofcoffee) on Jul 28, 2017 at 6:49am PDT

Coffee in a glass: why not! “Nitro cold brew” is brewed cold for 8-12 hours, and before serving, nitrogen is added to it, this changes the structure of the drink. Coffee, saturated with tiny bubbles, suddenly acquires a soft, silky, even creamy taste. The nitrogen makes it even more invigorating, so baristas recommend taking the first sip right away and limiting it to one glass. Nitro coffee has been brewed here for two years now, and it is in greater demand in the summer. Recently, a similar drink has been offered in the new Skuratov coffee shop on Malaya Konyushennaya.

Cherry-chocolate latte from Doubleby

What's cool: there's a cake-flavored latte. Price: 350 rub.

A post shared by DOUBLEBY in St. Petersburg (@doublebspb) on Jan 16, 2021 at 12:44am PST

The baristas decided to replicate the taste of the cherry-chocolate Black Forest cake in coffee. True, this turned out to be difficult, because the chocolate always tries to kill the cherry. “The perfect latte was achieved by trial and error,” says Doubleby. From different varieties of cocoa, we chose Valrhona, one of the world's best cocoa and chocolate producers. By sprinkling with freeze-dried blackcurrant, we managed to get a play of berry and chocolate flavors. We decided to infuse the cream with frozen cherries, melt the caramel with it, and add the resulting sauce to coffee. The result is a creamy-berry-chocolate taste as close as possible to the cake.

French delicacy

This peculiar dessert is called “French coffee with cheese”; it was French baristas who first decided to experiment. The original used the Brie variety, its delicate milky consistency best suited the taste of natural coffee. The idea was suggested by residents of the Ile de France region, where excellent Brie is prepared. They have long had cheese for breakfast, dipping it in coffee with milk.

Experts say that the tandem of products brings great health benefits. Cheese contains a lot of calcium, which is washed out of the body by the coffee drink. When combined, the lack of a useful element is leveled out, and the flavors combine perfectly.
