Classic version
First you need to make a strong espresso. To do this, you can use a coffee machine, but in this case it is recommended to use a Turkish coffee machine. With the help of this device it will be possible to maximize the taste and aromatic qualities of Arabica.
In addition to Arabica beans, you will need:
- full fat milk;
- granulated sugar (optional);
- mineral water.
When foam begins to form on the top of the Turk, turn off the heat. In 10-15 seconds the creamy “cap” will settle. Then add sugar, if using, to the container and turn on the heat again. Stir the coffee constantly.
Pour the full-fat milk into a thick-bottomed saucepan. Heat it, but don't bring it to a boil. Divide the product into 2 parts. Beat one of them with a blender or mixer for about 2-3 minutes. During this time it will turn into fluffy foam.
Pour the hot espresso into a glass glass, followed by a thin stream of warm milk. Place whipped foam on top. If desired, the composition can be supplemented with nutmeg.
Cinnamon

During this time, the peel should burst and the nuts should turn dark brown, making them easier to peel.
- Peel the fruits and grind them while still warm in a meat grinder. When they dry out, it will be more difficult to do this.
- Place the nut mince on baking sheets and let dry.
- It will still be a bit coarse, so it’s better to grind the grains in a coffee grinder or blender, and fry a little in a dry frying pan again, stirring constantly (if the color is pale).
It is better to store dry acorn powder for coffee without access to oxygen, in small glass or tin jars with tight lids. This way it can be stored for up to 5-6 months.

Wash the eggs under hot running water and dry with paper kitchen towels. Take the butter out of the refrigerator, place it in a deep plate and leave to warm up at room temperature. After sifted flour, pour into a bowl and add baking powder. Then mix them with a whisk or tablespoon until smooth.
Next, add sugar to the slightly melted butter and use a mixer to beat the mixture until it has a uniform consistency.
After this, add the eggs one at a time, while constantly stirring the mixture. Next, gradually add the dry mixture of flour and baking powder.
Pour coffee into a small cup and pour boiling water over it, then stir until all the coffee has dissolved.
Next, pour the chopped walnuts and coffee into the bowl with the dough. Mix the biscuit dough until smooth and evenly colored.
3 bake the cake.
Preheat the oven to 160 degrees. Aim. Line the baking dish with baking paper and, using a kitchen brush, grease it with vegetable oil. Then pour the dough into the prepared pan. After the oven has warmed up to the set temperature, remove the form with the dough into it. Bake the crust for 30 – 40 minutes until fully cooked. This can be easily determined using a toothpick; if there are no traces of batter left on it, then the cake is ready; if there are still traces on the toothpick, then bake for another 5 - 10 minutes. Take the finished cake out of the oven, using oven mitts to help you, and leave to cool at room temperature.

We wash the eggs under hot running water, dry them with paper kitchen towels and carefully break them so that the yolk can be separated from the white. 5preparing syrup.
Place the slightly cooled sponge cake on a beautiful flat dish, cut it lengthwise into 2 parts, so it will cool faster while we prepare the syrup. For this, boil the required volume of water and pour it into a glass. Add coffee and sugar with a tablespoon and mix the resulting syrup.
