Fredo cappuccino with milk, cream and ice - preparation options and the right choice of ingredients

Coffee Fredo - what is it?

Fredo is a popular drink in Italy and Greece. It can be prepared even at home, without using a coffee machine or other devices. There are many variations of the recipe, but traditionally 4 main ingredients are used:

  • Coffee, espresso mixture;
  • Milk;
  • Crushed ice;
  • Syrup for coffee.

Fredo coffee is most similar to iced coffee, but without ice cubes and has a smaller volume. This is a drink with a rich taste, which is also an excellent digestif, that is, it has a positive effect on digestion, and is especially recommended to drink after a hearty lunch. Iced coffee is more invigorating than hot espresso.

How to cook con panna

To prepare this drink, you can take 2 shots of espresso, or double espresso. You need to add a little powder to the cream, because the sugar disappears very quickly. In order to avoid cooking the butter as a result, you need to beat at low speeds and then gradually increase. A blender is not suitable for this process, because the speed is too high and the cream will turn into butter. The powder should be added at the very end.

Required Products:

  • espresso -50 ml;
  • cream - 20 ml;
  • powdered sugar - 1 tsp;
  • You can add sugar if desired;
  • for decoration you can take chocolate, cinnamon, nuts and so on.

Beans: Use any espresso blend. If it is 100% Arabica, let it be medium roasted; if the roast is strong, it is better to choose a blend with the addition of 20-30% Robusta, which will increase the caffeine content.

  • Brazilian Arabica is sweetish and gives body to the drink.
  • African Arabica – with a slight sourness, wine and berry flavor.
  • Arabica from Central America is slightly sour, with notes of citrus.
  • Indonesian Arabica is more piquant and makes the taste of coffee more interesting.

Water: it is better to take purified water, it better reveals the taste of coffee, makes it bright and full.

Milk: optimal fat content 1.5 – 1.8%;

Ice: It is advisable to crush it in a blender immediately before cooking, although if you don’t have a blender, ice cubes will do.

Syrup: caramel syrup is standard, chocolate or vanilla is acceptable, fruit syrup is undesirable, as the milk may curdle.

Brew double espresso in a Turk or any type of coffee machine. If you cook in a Turk, you will need to strain it so that you get 60 milliliters. Pour the espresso into a shaker or similar lidded container, add 50-70 ml milk, 15 ml syrup and 4 crushed ice cubes. Shake several times to create foam.

Tip: If you don’t have a blender, shake the coffee with ice cubes, or put the cubes in a glass and pour the shaken mixture of coffee, milk and syrup over it.

You can add sugar, cinnamon, chocolate chips, whipped cream or whipped milk on top. With whipped milk foam you get a Fredo cappuccino.

The cocktail can also be alcoholic if you add a teaspoon of liqueur.

Cappuccino and latte

Cappuccino and latte - what's the difference?

Let's start with what usually misleads the average person - with definitions. On some resources you can see information

that a cappuccino can be called coffee rather than a latte, because a latte is a kind of coffee cocktail.

By and large, both are coffee drinks, that is, drinks made from coffee. And if you take into account the fact that cappuccino, like latte, is based on espresso coffee and milk

, the division into “real coffee” and “not so real coffee” is purely arbitrary.

What these two drinks have in common is that in modern conditions they are usually prepared using a coffee machine. Due to different combinations of ingredients and differences in recipes, lattes and cappuccinos have different tastes

: A cappuccino has a richer coffee flavor, while a latte has a milder, less coffee-like flavor than a cappuccino.

Cappuccino is served in containers of 150-180 milliliters. When preparing this drink, a very important parameter is not only the temperature of the milk, but also the consistency of the whipped milk foam.

. A classic cappuccino requires foam of high consistency (that is, a high degree of thickness or density), which will provide a thick head of foam on top of the drink.

The benefits and harms of coffee

After adding milk to the prepared espresso so that the drink is homogeneous, a thick layer of foam

. For cappuccino, it is convenient to use a ceramic cup of the above capacity so that the foam even rises slightly above the edge.

The ratio of milk and coffee for cappuccino is very important - two to one. For example, for a cup with a volume of 180 milliliters, you should prepare 60 milliliters of coffee and 120 milliliters of milk

If the milk is frothed correctly, the ratio of milk foam, espresso and milk is approximately the same.

What and with what to serve Fredo coffee

  • Traditional serving option: strain the mixture from a shaker into a glass; if there is a lot of foam, spoon it on top.
  • Alternative: pour out of shaker along with crushed ice.

The Fredo coffee glass is a universal cocktail highball glass with thick walls and a capacity of 270 ml. Coffee is drunk from a thick straw.

Classic cappuccino recipe

Modern cappuccino is prepared in a coffee machine. First, a double portion of espresso is poured into a coffee glass, then the same amount of hot milk is added, and the composition is crowned with a lush head of milk foam. Another option is also common: the milk is not poured separately, but simply whipped up more foam, so that it not only settles on the drink in a voluminous cap, but also partially dissolves in it.

Ingredients:

  • coffee (espresso) – 60 ml;
  • milk – 60 ml;
  • sugar - to taste.

Cooking technology

1. Pour a double shot of espresso (60 ml) into a tall coffee glass or cup with a minimum volume of 180 ml that has been preheated with steam.

2. Heat the milk to 60-70 °C, then beat it with a cappuccino maker, whisk or mixer into a fine foam until the volume doubles.

3. Holding the foam with a spoon, add milk to the espresso, sweeten with sugar if desired and stir. Place foam on top.

A cappuccino maker is a thin metal tube through which steam is supplied under high pressure. Milk frothed in this way acquires a sweetish taste and a particularly delicate structure due to microscopic bubbles.

Manual electric cappuccino maker. Many coffee machines have a separate unit for frothing milk.

Alternative recipe. Kapuziner – served in old Viennese cafes, black coffee with a few drops of heavy cream, just to get the right color.

Greek cold coffee frappe

This is how frappe is served in Greek cafes: with water and a bonus cookie.

Making this invigorating drink is very simple. It is better to take Nescafe coffee; it must be very finely ground, otherwise you may not get good foam.

Greek frappe recipe

  • Pour about water into a tall glass onto your finger.
  • Add 1 spoon of instant coffee and sugar to taste.
  • Beat the mixture in any convenient way - there are special mixers, you can use a shaker, or you can do it as in the video below if you don’t have anything on hand!
  • When fluffy foam rises, add ice, milk and cold water to taste. Your coffee is ready!

The history of frappe

This drink is a purely Greek invention, and it has not yet taken root in any other country. And Frape, like many discoveries, appeared by accident. In 1957, at the International Exhibition in Thessaloniki, the Greek representative of Nestle presented a new product - a chocolate drink for children, which was whipped with milk.

One of the employees of the Greek representative office, Dimitris Vakondios, was a lover of instant coffee. One day during a break he wanted to drink coffee, but he didn’t have hot water. Then he decided to try making cold coffee, and shook all the ingredients in a shaker. This is how the world's first frappe turned out!

How to drink frappe

The categories of this drink are approximately the same as those of Greek coffee - sketos, metrios, glycos . That is, black, medium sweet and sweet. Some people add milk, some don’t, it’s a matter of taste. Of course, people drink frappe not only in the summer, but all year round.

The word frappe is of French origin, meaning “whipped, mixed.” But for the French, frappe is usually a cold cocktail with milk, ice cream or fruit. Greek frappe is sometimes also served with ice cream, at the client's request. The Greeks remade the French word for themselves, and frappe in Greek is called ο φραπές - a masculine word, by analogy with the word “ο καφές” - coffee.

Cold brew

Cold base or “Cold Brew” is becoming more and more popular and is increasingly replacing classic coffee drinks. Cold brew quickly spread throughout the world, becoming a separate recipe with its own culture.

This is a method of preparing and “brewing” coffee in cold water, often using ice. It has a bright coffee taste with a high caffeine content. Ground coffee, coarsely ground, is infused in cold water for 8 to 24 hours. Due to such a long period of time, choosing a recipe is quite a difficult task, but if you succeed, the result will exceed all your expectations. Cold brew is the ideal base for cold coffee drinks. Due to the poor solubility of acids in cold water, the drink turns out softer, and due to the long brewing time, fruit and berry descriptors are better revealed. This is the basis that allows you to fully unleash the potential of the flavor characteristics of various ingredients. Any juice, sparkling water and even tea will not spoil it, but will only complement the taste. The main thing is the Cold Brew itself. By taking the time to select coffee beans and a recipe, even in its pure form, it will delight your guests in hot and sultry weather.

Heat is not a reason to give up coffee. From the huge variety, everyone will find the very same variation of their favorite drink.

Selection of ingredients

To prepare any coffee drinks in countries located near the Adriatic and Mediterranean Seas, only fresh beans are used, ground immediately before brewing. This is necessary to preserve the aroma of the coffee. If you add soluble granules, you need to buy expensive brands, otherwise the cocktail will turn out tasteless and without aroma.

Milk or cream should be full fat. First, to get foam, low-fat milk additives do not whip well.

A popular ingredient is caramel syrup, although it is often replaced with other toppings, such as fruit or berry liqueur. However, you need to know that milk curdles when exposed to acids, so it is cooled very much before mixing. Fruit sweet and sour syrups are also cooling.

To make delicious Fredo coffee you need a coffee machine, but at home a Turk or even a small saucepan will do. The main thing is that the tea leaves do not boil; it is necessary to bring it to a boil 2–3 times. After this, it is cooled and filtered - grounds are not needed in the drink.

Depending on the fat content of the milk, cream or topping, Freddo can be very high in calories, especially if you sprinkle it with chocolate - up to 150 kcal. At home, you can make a low-fat cocktail and use low-calorie additives.

What you need to make espresso

It is believed that proper coffee can only be made using coffee machines. I’ll tell you more - now most modern machines are of the “Espresso” type. The principle of their operation is as follows. Water is heated to the desired temperature and passed through the ground material (see how to choose a coffee grind?). At the exit we get a finished drink. Of course, they know how to make the coffee we need.

A coffee bookmark for one serving should contain about 8-10 grams of ground coffee. This is approximately 2 teaspoons. You also need clean water. That's all the components.

A few words about home cooking. In any case, you can take a small amount of ground coffee and hot water (see how to properly store ground coffee). And from these two ingredients prepare a small portion of the drink. But it will taste different from the one you would get if you used professional equipment. But I didn’t say “It will get worse.” Perhaps the final taste will be more to your liking.

So, we stocked up with everything we needed. Let's talk about the intricacies of the process.

Cappuccino making technology

Cappuccino is prepared in a coffee machine or without it, using improvised means. Both options allow you to prepare a tasty and aromatic drink, while enjoying it it is difficult to guess the technology for its preparation.

If you don’t have a special coffee machine at home, don’t despair. The technology allows you to quickly and tasty make cappuccino, relying on the basic rules of its brewing.

In the coffee machine

Preparation in a coffee machine is a standard and convenient method for cafes and restaurants where there is a large flow of people. To prepare cappuccino, you must follow the following procedure:

  1. First you need to brew regular coffee according to a standard recipe using a coffee maker.
  2. Next, the coffee machine warms up for 30 minutes, releasing the resulting steam from a special tube.
  3. Take a metal container and add milk to it, leaving 1 cm to the bottom of the spout. This is necessary so that during the boiling process the milk does not escape from the container.
  4. Then the tip of the cappuccino maker is immersed in the bottom of the milk container, the steam is turned on and a small foam is formed. When prepared correctly, it will have a pleasant sweet taste.
  5. The milk foam is poured into the coffee slowly and in one line.
  6. Next, steam is released and the tip of the cappuccino maker is wiped.

How to make cappuccino without a coffee machine

If there is no special coffee machine in the house, this does not mean that making cappuccino is in doubt. It can also be prepared using a Turk, if you follow all the recommendations and the sequence of work correctly. The cooking technology is as follows:

First you need to brew regular coffee in a Turk, adding a little sugar to it to taste. To do this, place a dry coffee mixture and a spoonful of sugar into not very hot water.

It is important to cook it correctly; it should not boil. As soon as its cap rises slightly, you should immediately remove the coffee from the heat.

To make the coffee richer at the end of preparation, you need to raise it above the heat for a few seconds and lower it back down. Such manipulations are carried out 3–4 times. The finished coffee is set aside and we move on to preparing the milk. To do this, you need to heat it in a separate container; it is convenient to use a microwave. Next, the heated milk is poured into a capacious container and whipped into foam with a mixer. The hat should have a thick consistency.

The prepared and slightly infused coffee is poured into a container from which you can drink the finished drink. You only need to pour coffee up to half a glass or cup. Next, foamy milk is gradually poured into the same container without stirring. When there is a little foam left in the milk glass, you need to transfer it with a spoon into a container with the drink and draw a beautiful design with a toothpick. Top with dark grated chocolate for taste.

Is it possible to lose weight with cappuccino?

The preparation process is long, but uncomplicated. With a coffee machine, everything is much faster and more convenient, but this does not mean that without it you will not be able to prepare a delicious drink.
