To warm up the frightened passengers, the administration placed them in the hall, and the emergency chef of a nearby restaurant, named Joseph Sheridan, treated them to a coffee drink with whiskey and cream according to his own recipe.
When asked what kind of coffee it was, he said it was Irish. Among those who tried it was the editor of the New York Times and a journalist from a newspaper in San Francisco.

Preparation requires strict adherence to proportions: freshly brewed strong coffee - 4 parts (80 ml), Irish whiskey - 2 parts (40 ml), cream - 1.5 parts (30 ml), brown sugar - 1 teaspoon. In other sources you can find a different ratio: 170 ml of coffee, 30 ml of whiskey, 40 ml of cream.
Different sources contain different approaches to consistency in mixing ingredients, each of which has a right to exist. The technology for preparing the classic recipe is simple: first, hot, strong coffee is poured into a bowl, sugar is added, whiskey is added, and finally whipped cream.
For a cocktail, it is better to take cream purchased in a store, since homemade cream is too fatty and there is a high probability that after laying out it will settle, which will ruin the appearance of the drink. You can use cream that is sold in a balloon: it should be squeezed out from the edges to the center, gradually reducing the diameter of the circles.
Whiskey recipe
Another recipe, although it includes the same ingredients, is interesting in that sugar and whiskey are first placed in a container, then a small amount of alcohol is poured into a teaspoon and set on fire. Burning alcohol is added to the rest of the composition. After lighting, freshly brewed, hot coffee is poured in. The container with the drink is usually covered for a few minutes so that the components “make friends”, and cream is laid out on top. According to experts, the taste of the drink prepared by the first and second methods will not differ, but the second preparation technology will make it much softer and with a pleasant caramel taste and aroma.
With Baileys liqueur
It is considered a female version of the drink, since Irish whiskey is replaced with Baileys liqueur, so beloved by the female sex. A glass of this coffee can dispel melancholy and fight depression.
The composition is as follows:
- 160 ml strong coffee.
- 40 ml Baileys liqueur.
- 40 ml whipped cream.
- Sugar to taste.
First, liqueur is poured into the glass, then sugar, then hot coffee. Everything gets mixed up. On top is a layer of whipped cream, which is sometimes sprinkled with grated chocolate.
Cinnamon

Whiskey selection
Be careful when choosing alcohol. To get a real traditional taste, you need to choose good Irish whiskey brands made according to traditional recipes.

The age of the alcohol does not matter.
Preheat the whiskey. This way you will be able to mix the cocktail better. A water bath is suitable for heating.
Cream selection
Oddly enough, but it is the choice of the dairy component that will be the most difficult. You will have to find cream with a fat percentage of around 20-30 percent. You can use cream with a fat content index of 10%, but you will not be able to get the rich taste that the original has.
Regular cream creates a lump at the bottom of the cup if the coffee is not drunk immediately. Whipped cream would be a better option. In cafes, as a rule, they give preference to the latter option. This is primarily due to the greater presentation of the Irish Coffee cocktail. But there are subtleties here too. Whipped cream from a can will not work.
You can't make a big foam. Irish coffee is usually drunk straight away without stirring. It is impossible to drink it without getting dirty with high foam. A good barista or bartender will use liquid cream.
