There are two types of cocoa for consumers:

  2. Quick preparation, that is, one that has been filled with warm liquid (milk or water) - and you can drink it. It contains small grains of other additives, such as sugar.

When choosing, it is better to give preference to the first one, since it is a pure product without impurities. In addition, instant cocoa powder loses most of its nutrients after processing.

The type of cocoa also affects the quality and taste of the drink.

  1. "Criollo." The beans are very soft, there is absolutely no bitterness or sourness in them. This variety is considered elite, and the products made from it are the best.
  2. Forastero is the most popular variety on the market. Most products are made from it. The beans have a slight bitterness, which is also present in cocoa powder.

  3. "Trinitario." This is a hybrid that is bred artificially, but is used very often. It has a pronounced aroma and taste.

There are other varieties of cocoa that are also found on the market, but they are not considered elite. The cost of cocoa powder from the three varieties listed above is several times higher than that of the others.

How to cook cocoa powder with milk and water

The properties of cocoa depend on the liquid from which it is prepared. The milk mixture has a rich taste and smell, but is not suitable for people with lactose intolerance. In ancient times, a drink made from cocoa beans was available only to a select few: priests, rulers and close elite. It was credited with magical and healing properties, and the recipe was kept in the strictest confidence.   3. Cocoa and sugar need to be ground in boiling water into a homogeneous mixture. If the ingredients are thoroughly dry mixed, there will be no problem. If there is a layer of cocoa powder left in the bowl, you will have to deal with lumps.
  4. The milk is heated separately. At a temperature of 50ºС, inevitable and irreversible changes occur in it:
    albumin protein coagulates; calcium and phosphorus pass into a hydrophobic form; milk fat is saturated with the resulting solid compounds. As a result, a film forms on the surface of the milk, which will become dense and spoil the appearance of the drink after it cools. In addition, most of the nutrients will pass into it, and the composition of the product will become poorer.
  5. To prevent a film from immediately forming in the pan, whisk the milk without allowing it to boil violently.

What can I substitute in the recipe?

You can replace cocoa powder in baking and other recipes with analogues:

  1. Carob is the most common substitute for cocoa powder. You can distinguish products by color (carob is lighter). But the taste of the products is very similar, however, carob is sweetish, and therefore the amount of sugar in baked goods should be controlled if cocoa powder is not used.

  2. Chocolate is also a substitute for cocoa powder. It is believed that one bar (100 g) is equal to three tablespoons of cocoa. For replacement, only dark chocolate is suitable, which contains grated cocoa, and its part is at least 72%.

  3. Alternatively, you can take instant coffee mixed with condensed milk. Of course, it will not be possible to completely recreate the taste, since coffee has its own and is quite pronounced, but you can still achieve some similarity with cocoa powder.

Don't forget that you can replace real cocoa powder with an instant product. But in baking, instant powder can behave unpredictably. For example, the biscuit dough will not rise, or the color of the product will be uneven. This is due to the fact that instant cocoa powders are produced with a large number of additives, which are not always natural.

Compote cocoa

It can also be used as a base for cooking. You can take a pre-prepared drink, including a rolled one, or you can brew it immediately before making cocoa without adding milk - it is not needed in this recipe.

Ingredients

If you plan to prepare a compote only for further preparation of a flavored drink from cocoa powder, you will need:

  • Water – 500 ml;
  • Any berries or fruits to taste (or a combination thereof) – 100 g;
  • Cocoa powder – 2 tbsp. l.;
  • Sugar – 4-5 tbsp. l.

How to cook?

This is done using the following algorithm:

  • Place berries or fruits in boiling water, add sugar;
  • Let the mixture simmer for 7-10 minutes. over medium heat. Please note that the boiling should not be intense;

Step-by-step preparation of a classic drink

This is a very simple recipe. Cocoa with milk (children will drink it with pleasure) is prepared from the following ingredients:

  • home boiled milk – 250 grams;
  • natural cocoa powder – 1.5 teaspoons;
  • granulated sugar – 2 teaspoons.

Let's start with milk. First, be sure to remove the film from it, if any. It is this element that turns many children away from drinking milk. After removing the film, pour the milk into a small saucepan and place on low heat.

In the meantime, pour natural cocoa into a mug and add two tablespoons of granulated sugar (you can do more if your child likes it sweeter). Although all children are greedy for sweets, try not to overdo it with sugar. If you put 3 tablespoons of granulated sugar in a mug, then do not put gingerbread cookies, sweets, or sweet cookies on the table. Too much sugar can cause serious harm to your baby, so be careful.

Next, mix dry cocoa and sugar thoroughly in a mug. Then add one and a half teaspoons of heated milk to the dry mixture, whisk everything thoroughly with a spoon until a foamy, homogeneous mass is formed. Then pour the diluted mixture into the milk already boiling on the stove. Stir the drink thoroughly, without bringing it to a boil, and remove from heat.

Pour the resulting cocoa into a cup or glass, let it cool and serve it to your child for breakfast. Children will undoubtedly enjoy the aromatic and healthy cocoa prepared according to this recipe. Although the treat itself is warm and thick, many children prefer to drink it using a cocktail straw. Is it possible while losing weight?

Cocoa powder is a product that can be consumed when losing weight. The drink speeds up metabolism and also gives a quick feeling of fullness, which helps avoid overeating. Of course, for those losing weight, it is better to cook cocoa in water or use milk with a low fat content, but not skim milk: this is completely unhealthful.

The recommended dose of a drink made from natural cocoa powder is 500 milliliters per day. In this case, it is advisable to divide the intake into two times. It is also worth excluding granulated sugar from their drinks; it is better to use sweeteners.

Cocoa with vanilla

The very first known recipe for the drink belonged to the Aztec priests and included cocoa beans, honey and vanilla. Linguists studying ancient documents argue about the fourth ingredient - pepper or cloves.

However, the drink turns out exceptionally tasty even without this:

  • cocoa – 1 bar spoon;
  • honey – 10 g;
  • vanilla pod.

You should not look for cocoa beans in stores, striving for historical accuracy. The drink can also be made from cocoa powder. They began to prepare it with milk in Europe, so the recipe contains only water.
