  3. The water should be cold and unboiled.
  4. Sugar should be added immediately, and not after preparing the drink. If one person drinks an unsweetened drink, in Turkey they will put a separate pot on the stove for him. At the same stage, a pinch of cardamom was added to Ottoman coffee.
  5. To brew coffee you need the slowest heat. You'll have to wait for the drink to reveal all its properties. Be patient, like the Arabs who brewed coffee on sand.
  6. The cups for serving the drink must be warm.
  7. In the classic recipe, the foam is skimmed off with a spoon and transferred to mugs. The water boiled - removed the cezve from the heat for 15-20 seconds, transferred the air bubbles into cups, and put them back. And then they repeated the same thing twice more. In a modern Turkish coffee recipe, these subtleties are observed less frequently; the drink is simply brought to a boil and served.
